Sweet Potatoes are abundant these days. I bought some white fleshed sweet potatoes but there are orange and purple varieties available in the market too. The orange and purple ones are actually more nutritious but I wanted to bake these white fleshed ones because of their milder flavor and texture.
It is often called Super Food because of it’s high content of Vitamin A, C, B6, manganese, potassium, copper and fiber and also because it is rich in anti oxidants, anti-inflammatory nutrients and blood sugar regulating nutrients.
This is a super simple easy peasy and full of goodness recipe. You don’t have to be a chef or a cook for this. All you need is oven :).
Sweet potato or Yam : 1 big, cut into 1″ thick circles
Honey : 1 tbsp
Ginger : 1 tsp freshly minced or grated
Black pepper or red chili flakes : to taste
Rock salt or table salt : to taste
Water : 2tbsp
Oil spray or Oil for greasing baking sheet and coating the top of sweet potatoes lightly.
Peanuts : 1/4 cup, Dry roasted in pan or oven and coarsely ground.
Lemon juice : 1 tbsp
Chaat masala : 1 tsp to sprinkle on top, optional
Preheat the oven at 400*f. Grease a baking tray.
Arrange the cut slices of sweet potato or yam on the baking sheet.
Mix honey, ginger, pepper and salt in a bowl with water.
Gently spread the honey ginger mixture on top of cut sweet potatoes.
Bake in the oven for 30-40 minutes till slightly golden in color. Rotate the tray in between and flipping the circles once, after 15-20 minutes.
Take it out in a serving dish, top with crushed peanuts, chaat masala and lemon juice. Enjoy warm.
Note : steaming and boiling is a very good way to cook the sweet potatoes as it helps in the retention of most nutrients. Also, always use some oil or fat when cooking the sweet potatoes for the maximum absorption of its nutrients in the body.
