Chai masala or Tea Spice is an essential must have in my tea cupboard. I start my day either with a cup of ginger tea or masala chai which is spicy tea. There is a reason behind it besides just the taste. The spices used are warm in nature and help clear the sinuses and respiratory system in the morning. So, a good cup is what makes me go :).
Yields : 1/4 cup approximately
Serve: 1-2 pinches per cup
Cinnamon : 1 tbsp
Green cardamom : 1 tbsp
Black pepper corns : 1 tsp
Cloves : 1 tsp
Nutmeg : 1/2 tsp
Grind everything together in a coffee grinder. Store in an airtight jar in a dark spot. It is good for 1 month. It requires only a pinch per cup of tea.
To use it, boil 1 pinch of spices mix with the water for making tea. Use it loose. When water comes to boil, add 3-4 tbsp of milk if you use any and tea bag or 1 tsp of loose black tea. Boil for 2-3 minutes. Take it off the flame. Add to the cup through the tea strainer. Enjoy with or without sugar or Splenda or sweetener of your choice.
I bet you will start enjoying your Starbucks chai latte at home and much cheaper ;).
