Mango Custard Caramel Pudding is a dream come true for me, since I am visiting mom and dad at home in India. Sooooo many beautiful memories attached with the custard pudding. My Dad loves all the versions of the pudding that mom makes with custard as a star. Custard puddings were always a hit at home and mom made this especially when we had guests visiting.

Yesss… Mango Custard Caramel Pudding is what I am making for my dad for the Father’s Day. After all, I am celebrating Father’s Day with him after eons of years. Therefore it calls for something special and something purely from golden nostalgia and this particular post is dedicated to my dad, your dad and to all the wonderful dads of the world.

My dad is one of the warmest dad, that one can ask for. He worked very hard through out his youth and our childhood to secure a good future for his 4 children. While my mum stayed home and raised us into responsible & “sensible” beings {I would like to think so}, our dad was constantly on the road, working non stop to grow his business and making sure that we had the stars and moons of the world. Sometimes he mumbles silently, that he missed our growing up years but all in the good faith!

The above quote stands true for my dad! He is 65+ and so full of zest and zeal for life. He loves traveling and good food. He loves socializing and entertaining. A young man forever at heart!

Does this look pretty? I think it looks damn pretty and inviting. A chilled serving of Mango Custard Caramel Pudding can make your mood set to rock the heavens with your feet up, heart in dreamland and mambo-Jambo in your mouth.

My mom helped me in making this Pudding. After I was done shooting the pudding etc, we all dug into it with our spoons. My mum said – It is good but mine is different and she still kept eating, enjoying each bite..😳😳… All the kids couldn’t stop eating and kept asking for more and more and more! Hmmmm mumma it is delicious!! Hmm Bua (aunt), can I have more?.. I was a happy champ but still wondered scratching my head – mum helped me make it and still says it is not the same. Nonetheless the Mango Custard Caramel Pudding came out fabatabulous.

This pudding has 4 components-

The finely crushed cookies/biscuits.

The quick custard made using the box from the market. In case, you do not find custard powder in the market, you can use ready made vanilla or butter scotch pudding. And you may also make vanilla pudding at home, using my this RECIPE .

Finely chopped ripe & firm Mangoes.

And last not the least, quick & easy caramel sauce.

The Pinoeer Woman’s recipe uses brown sugar in the recipe with butter & cream. I used white sugar, lesser butter and equal amount of full fat milk to get that pouring consistency of the Caramel Sauce. That gave me the perfect amount of the required caramel sauce for the pudding. You will find an easy peasy caramel sauce recipe below.

Normally, the pudding is set in a dessert bowl and chilled in the refrigerator. It is then sliced and scooped to serve in dessert bowls. But if you know me, I am a sucker for personal dessert portions. That is what I did with this one too. I set the pudding in individual dessert glasses and then served to eat with tall dessert spoons. It is so very convenient. Isn’t it?

Hey, if you are thinking that I made mango custard, then don’t get carried away. I didn’t corrupt the mangoes at all. The mangoes were used in their purest form – washed, peeled and cut into small pieces. Then the top of the pudding was loaded with these beautiful pieces and then poured with some more caramel sauce + some crushed biscuits for extra texture.

This is such a simple recipe that I promise, you will make it again and again!

Mango Custard Caramel Pudding

Ingredients

Cookies /Biscuits, crushed - 1 cup . You may use any kind of cookies for the pudding. I used a mix of chocolate & digestive. You may also use crushed cake.

    Custard powder - Ready to cook small packet from the market.

      Mangoes - 1 cup, washed, peeled and cut into small cubes. I used 1 plum also to add the color contrast.

        Caramel Sauce Ingredients (You may use market bought also or refer to the recipe below)

        • Sugar - 4 tbsp you may use brown sugar too and if you do, follow pioneer woman's recipe.
        • salt - a very small pinch
        • Butter - 1 tbsp
        • Milk full fat - 4 tbsp

        Instructions

        Cookies/Biscuits Crushed Base

        • The cookies need to be finely crushed. If they are rich cookies, then leave them as is. If you are using digestive kinds or drier kinds, you may add 1-2 tbsp of melted butter. In case you want richer pudding, you may crush the slices of a pound cake or any cake to create the bottom layer of the pudding.

        Custard Preparation

        • Use any market bought packet of custard powder, like that of national, coles, kampp, gold's brown & polson etc. Make custard with 500 ml of milk and 50 gms of custard powder, as per the instructions given at the back of the custard powder box. Make sure to make thick custard. Once cooked, set aside to cool down to room temperature. For quick cooling, Set the bowl of custard on an ice bath (a larger tray or bowl filled with ice cubes). While cooling down, it will start forming a top layer. When ready to layer, whisk the custard vigorously to dissolve the top layer.

        Mangoes

        • Use the fully ripe and less fibrous variety of mango. Cut the mango after washing and peeling, into small cubes. I used a tight plum also to add contrast in texture and taste. Cut and set aside in the refrigerator till ready to use.

        Caramel Sauce Preparation

        • Take a heavy bottom pan. Add white sugar, butter and salt to the pan. Cook on low flame till sugar turns golden. Stir continously to avoid burning.
        • When golden, add milk and stir continously. Bring it to a boil and cook for 2-3 minutes on lower medium heat, till you get the desired pouring consistency.
        • In case the caramel gets thicker, add 1-2 tbsp more milk after switching off the gas stove.

        The 4 components of the Mango Custard Caramel Pudding are ready.

          Layering the Pudding

          • {You may create 4 thick layers or you may create 8 thin layers. I created 4 layers only}
          • Take 4 to 6 small dessert bowls or glasses.
          • Distribute the crushed biscuits/cookies equally among all the glasses. Press them down tight. Save a little for top garnish.
          • Now take the custard and whisk it to break the top layer. Distribute the custard evenly in all the glasses.
          • Divide the caramel sauce into 2 parts. Pour 1 part of the caramel sauce over the custard in the dessert bowls/glasses.
          • Now take out the chilled mangoes and load the top of the custard and caramel with the mangoes. Add them gently so that they stay nicely on the top.
          • Now garnish the pudding further with some crushed biscuits/cookies, 1 part of caramel sauce.
          • To add more attention, garnish further with either basil leaves or mint leaves. I am in India these days, therefore I used Holy Basil Leaves and they went so well with the dessert, since they are sweet in taste.

           

          Now tell me – isn’t it easy to make and double easy to eat? Such a gorgeous dessert which will make you a star of the evenings or get togethers every time, you make this dessert. I can vouch for it since my mom still is the hero whenever she brings the custard pudding to the table.
