So we celebrated our little one’s birthday today..who btw is not so little anymore. She turned 10 today and that child knows how to celebrate. And she made sure that we all celebrated her with the same vigor and joy.

This child of mine is larger than life kid. She brings fireworks, storms, rains, warmth, love, cuddles, laughter, and so much sass and attitude with her. Keeps her dad wrapped around her pinkie. And that is just a “bit of” Myraa for you. 😂 

You must be thinking what is the co relation of a birthday and the pancakes. Well we cut the stack of PANCAKES on her birthday instead of a regular cake. It is her 10th birthday after all. She wanted everything to be different.

And this newly POTTER HEAD convert just had her pre-birthday HARRY POTTER PARTY.

Food for the Birthday Party

Since the set up took most of my time and energy, I kept the food menu pretty simple.

We ordered in CHEESE PIZZA. And kids had it with FANTA. We then blew the sparkling candles off the CUP CAKES. And that was it.

I am sure this will come handy for many folks here who love to throw theme parties for their kids.

Pancakes Ingredients

Ingredients of the Recipe

All Purpose Flour 

Sugar

Baking powder

Salt

Milk

Eggs

Butter, melted

Butter Spray or little butter if required for cooking

Kitchen Equipment for the Recipe

Mixing Bowls, a Wire Whisk, a Microwave-safe Bowl, a Hard Anodized or Iron pan, a Spatula

 

 

What temperature to cook the Pancakes?

The best is to cook them on medium heat. If you cook at low heat, they can turn out tough. The higher heat can burn them too quick without cooking in the middle.

Can I make these Vegan?

Although I haven’t tried vegan pancakes but you can try veganizing it.

Instead of milk, use plant based milk of your choice.

Also substitute butter with Olive oil. It will make it moist.

How can I personalize Pancakes?

  1. Add 1 tsp of Vanilla to add more flavors.
  2. You can add 1 tsp of cinnamon to make these Cinnamon Pancakes and pour some whipped cream on top.
  3. Soak them in Tre-leches mix to make Tres-leches Pancakes.
  4. You can add 1 tsp of Apple Pie spice to the ingredients for Apple Pie Pancakes.
  5. 1 tsp of Pumpkin Spice Mix can be added to make them taste like Pumpkin Spice Pancakes.
  6. Some Tea Spice would be awesome too.
  7. You can add chocolate chips or pumpkin puree, or beets puree or matcha powder to the batter to taste them like however you want to.

There are thousands of possibilities to personalize these.

How to store home made Pancakes?

I normally bring the pancakes to the room temperature first. And then refrigerate them in an air tight container for up to 1 week. 

How to serve refrigerated pancakes?

Place 1-2 pancakes in microwave safe plate. Cover with microwave safe cover and heat upto 1 minute. Serve it with your choice of syrup on the top.

Pancakes - Homemade & Super Soft

Learn how to make super soft pancakes at home. Your kids will love it and so will you.

Equipment

  • Mixing Bowls
  • Measuring cups and spoons
  • Wire whisk
  • Microwave Safe Bowl
  • Non stick Pan
  • Spatula

Ingredients

  • 1&1/2 cups All Purpose Flour
  • 3 tbsp Sugar
  • 1/4 tsp Salt
  • 2 tsp Baking Powder
  • 1&1/4 cups Milk room temperature
  • 3 tbsp Butter melted and then cooled to room temperature
  • 2 Eggs
  • Oil Spray or Butter for Greasing the pan

Instructions

  • In a large bowl, combine flour, sugar, baking powder, and salt.
  • In a small bowl, combine milk, eggs, 3 tablespoons melted butter and add to flour mixture, whisking with wire whisk until smooth.
  • Heat the non stick or hard anodized pan on medium flame with a light oil spray or butter.
  • Ladle about 1/4-cup batter for each pancake onto hot griddle. Cook pancakes for 2 to 3 minutes on medium flame, or until tops are covered with bubbles and edges look cooked. Turn with flat spatula and cook the other side for about 2 minutes.
  • Serve warm with maple syrup OR honey OR chocolate sauce!

Quick Chocolate Sauce Recipe

  • Take a microwave safe bowl and heat 1/2 cup of heavy cream in the microwave for about 1 minute. Take it out. Add 1/3 cups chocolate chips of your choice to the hot cream. Whisk them together with a whisk or a fork till chocolate chips are melted well and incorporated as a good liquids sauce. You may store it in fridge for other uses too :).
