Today and Tomorrow starts the new year of Harvest in India..an onset of spring..a big day for farmers to start getting ready for sowing new crops. It’s celebration time :). The festival is celebrated with the name of Makar Sankranti, Pongal, Uttaran and Bihu,etc. in different parts of the country. The motto is same :). This festival is celebrated with kite flying. The skies are covered with colorful kites. Also sweet meats made of jaggery, sesame, milk powder or mawa, peanuts etc are made. I am sharing two of the sweets that I made. One is Sesame Brittle, which is vegan made with jaggery and sesame seeds. Another one is Sesame Sweet Truffles or Til Laddoos. Sesame is called Til in Hindi in India.

I remember, my dad used to bring lots of freshly prepared these sweet meats from the market on this special day. We would have Bon- fires and eat all the fun sweets along with pop corn and peanuts till late in the night, singing and cracking jokes…some plain family fun. The day has been always special since my mom’s birthday falls around the same time..so double celebration for us :).

Let me put down the simple and straight recipe for this gorgeous and tasty brittle..so simple..done in a jiffy and cleared from the plate faster than that ;).


Ingredientsย

Jaggery (light colored) : 1 cup finely chopped
Sesame seeds (white) : 1 cup

Methodย 

Take a heavy bottom pan. Add the chopped jaggery to the pan and heat it through on low medium flame. It will bubble, keep stirring.
Cook jaggery on low flame for 3-5 minutes.

Add sesame seeds. If you want you can roast these seeds lightly before but they can be added as is.

Take a parchment paper. Pour the hot mixture on this parchment paper.

Cover it with another big piece of parchment paper. Press and roll it with a rolling pin.

Remove the top parchment paper. Let it cool at the room temperature.

Once cooled, break it off in desired pieces.

They can be stored at room temperature.

Ingredientsย 

Til ki Chikki & Til ke Ladoo {Sesame Brittle & Sesame Fudge}

Dry Milk Powder or Condensed Milk or Mawa or Khoya : 2 cups
Sesame seeds : 1 cup
*Sugar (fine) : 1 cup
Note :
If you are using dry milk powder, then add 1/3 cup milk to it.
If you are using condensed milk, skip the sugar if it is sweetened already.

Method :

Take a pan, add sesame seeds to it and roast them on low flame till they turn slightly pink. You have to be careful while roasting them since they are delicate and burn too soon.. So focus :). Take them out and cool them at room temperature. Now grind them coarsely in a processor or in a bag.

Take a heavy bottom pan. Add dry milk powder dissolved in milk or condensed milk or Mawa or khoya to the pan. Keep then on low flame. Let the milk product cook on low flame for 3-5 minutes, till it becomes slightly pink and starts smelling divine. Keep stirring or it will burn at the bottom. It might be lumpy if using milk powder or condensed milk. But when you add the dry sesame seeds and sugar and mix well while rubbing them together..it will become like a coarse mixture to work with.

Now take it out in an open pan. Add cooled and crushed sesame seeds and powdered or fine sugar. Mix well with hands or a fork.

Take a small portion and make a ping pong size ball. Finish the whole mixture like that. Will yield 25 ladoo.

You have to act fast since it will be hard to work with the cold mixture. You have to finish the ball making with warm mixture.

It can be stored at room temperature in an air tight box for sometime.
