Super Bowl 2017 is over and I am sure that everybody out there stuffed themselves up with all the chips, pizza, hot dogs, chili, nachos, burritos, fries and what not. Right? Right? I really wanna know the truth. Believe me, It’s okay since it is the day that we dedicate to Binge Eating, giving due credit to all the Food & Beverage Companies out there, running their advertisements back to back, while the game is on. I say, done with yesterday and now snap in today to good eating with this Winter Vegetables Soup {GlutenFree + Nutritious}. It is not only nutritious, it is filling and it is super delicious.

Being a Food Blogger, puts you at an immediate risk of over eating and as a result over weight, which eventually can add up to some “not so good” conditions like high cholesterol, diabetes etc, if you do not keep yourself in check.

There are days when I indulge and then there are days when I discipline myself. It still puts me at the over weight spectrum. Since I turned 40, I can feel the difference in my metabolism all of a sudden. I do not like it, not at all.

Amit and I have decided that we will try and be healthier and fitter by 2018. As a result, we have started walking more and eating better. Sprouts, salads, broths and soups intake has increased in our diet. Sprouts come handy when we want to snack during the day. The soups and broths some times become our dinner and we consume it guilt free,and sometimes 2-3 cups.

Winter Vegetables Soup {GlutenFree & Nutritious} is one such soup from my soup collection, which is not only delicious and filling but is very flavorful, delicately enhanced with soy sauce. It has winter seasonal vegetables and therefore I am calling it Winter Vegetables Soup.

Winter Vegetables Soup {GlutenFree + Nutritious}

Easy and Nutritious Soup made with winter seasonal vegetables. Perfect for light eating and weight control.

Ingredients

Winter Vegetables

  • Ginger - 1 tbsp finely chopped or grated
  • Garlic - 1 tbsp finely chopped or grated
  • Green onions / Scallions - 8 white and green part separated and chopped fine
  • Green beans - 10 to 12 chopped in him slices
  • Carrots - 2 medium size, chopped fine or grated thick
  • Cabbage - 1 cup finely chopped or grated
  • Cauliflower - 1 cup finely chopped into tiny flowers

Oil & Condiments

  • Oil - 2 tsp
  • Soy sauce - 2 tsp
  • Corn starch corn flour - 1 tbsp dissolved in 2 tbsp water
  • Water - 6 cups
  • Salt - 1&1/2 tsp or to taste
  • Black pepper - 1/2 tsp or to taste freshly milled (crushed)

Instructions

NOTE - All the vegetables need to be chopped into similar size and shape, so that they cook evenly.

  • Heat 2 tsp oil in a sauce pan. Add ginger, garlic and white part of the scallions to it and saute for few seconds, till onions become translucent.
  • Now add all the other vegetables and saute for 2 minutes on medium low.
  • Add soy sauce and water. season with salt and black pepper and stir.
  • Add the dissolved corn flour (starch) and Stir.
  • Bring it to a boil. Reduce the heat to medium and simmer for 10 more minutes till the water is reduced by a cup or so.
  • The soup is ready. Garnish with green part of the scallions. Serve it warm.

Storage

  • Once it cools down to the room temperature, store in an air tight container in the refrigerator.
  • When ever, you want some, pour it out in a microwave safe bowl, warm it up for 2 minutes and serve warm. Or heat it up on the gas stove and serve.
