It is an eggless cake and just spilling with complex flavors, stronng aroma and beautiful texture. My house smelled divine when I baked this cake. The aroma settled down in the far corners of my home for few days. It was comforting.

Chai Spiced Walnut Raisins Cake {Eggless} with Cinnamon Glaze is not your regular kind of cake. I mean it is not the sponge cake or vanilla or chocolate in taste or texture. It is precisely a Tea cake.

Tea cake means different thing in different countries. In UK, it is a slightly sweet yeast proofed bread, whereas in USA, it can be any type of cookie or a cake. The word “Tea” specifically refers to the accompanient with Tea, hence the Tea Cake.

I had recently made a big batch of Tea Spice Mix. Since then, my mind was set to bake the cake with chai spices as flavoring. The Chai mix is warm in nature and is very useful in winters to keep the common symptoms of cold at bay.

I am a serious Chai Drinker. When I crave for chai, I need it then. No other beverage can take its place.

Few facts about the post
  1. Chai Spice Mix means Chai ka Masala in Hindi that includes a combination of warm spices like dry ginger powder, cardamom powder, nutmeg, black pepper, cloves, and more. For a good Chai Spice Mix or Chai Masala Recipe – CLICK HERE ! You may buy a good chai spice or chai masala from the market too. Use chai mix wisely. If it is strong mix, use cautiously. If it is mild, use as desired. Refer to the recipe.
  2. FLAX SEED MEAL – Flax seed meal is coarse meal/flour made by grinding FLAX SEEDS. Flax is Alsi/Ulsi ka Beej in Hindi. You may simply grind the seeds into coarse meal and store in a closed container in refrigertor. It is a great egg substitute and a great way to add more fiber in your diet.
  3. Egg Substitute – I use Flax Seed Meal often in my baking to substitute eggs. Having said that, it works best with muffins, tea cakes and other hearty cakes. This might not work in rich and delicate cakes like sponge cakes etc.
  4. Recipe for EGG SUBSTITUTE with FLAX MEAL1 Egg = 1tablespoon Flax Meal dissolved in 3 tablespoons of Warm Water. Set aside for 1-2 minutes and then use in place of eggs in the recipe. It can be used for substituting upto 3 eggs in a recipe.
  5. If you eat eggs, then you may use eggs in the recipe instead of flax meal.

Ingredients

Make sure that all the ingredients are at the room temperature.

  • All Purpose flour - 2 cups
  • Butter unsalted - 1/2 cup or 1 stick
  • Brown sugar or Jaggery - 1 cup. I used jaggery
  • Honey or Maple syrup - 1/4 cup. I used Maple syrup.
  • Egg substitute for 2 eggs = 2 tbsp flax meal dissolved in 6 tbsp warm water for 2 minutes Refer the notes at the bottom
  • Salt - 1/4 tsp
  • Baking powder -1 tsp
  • Baking Soda - 1/4 tsp
  • Chai spice - 1&1/2 tbsp if strong mix or 3 tbsp if mild mix.
  • Yogurt or sour cream - 1 cup
  • Vanilla essence - 2 tsp
  • Walnuts - 1 cup chopped roughly
  • Raisins or Sultanas - 1/2 cup

Cinnamon Glaze

  • Confectioners sugar or powdered sugar - 1/4 cup
  • Milk - 2 tsp
  • Cinnamon powder - 1/2 tsp

Instructions

  • Preheat the oven to 350°F. Lightly grease a 9- or 10-cup bundt-style pan. OR use a 6 bundt cake mould of large muffin size.
  • In a large bowl, beat together the butter, brown sugar, and maple syrup until light and fluffy.
  • Add the flax meal jelly, beating for a minute or two and scraping the sides and bottom of the bowl.
  • Stir in the baking powder, baking soda, salt, and chai spice blend.
  • Stir in half the flour, followed by the yogurt and vanilla, and finally the remaining flour.
  • Mix until just combined, scraping the sides and bottom of the bowl between each addition.
  • Mix chopped walnuts and raisins in the batter.
  • Scoop the batter into the prepared pan, and bake for 50 to 55 minutes, until a cake tester or toothpick inserted in the center comes out clean. If using the 6 bundts pan, the cake should be done in 35-40 minutes or till the toothpick comes out clean on testing.
  • Remove the cake from the oven, and cool in the pan for 15 minutes before turning it out onto a rack to finish cooling.
  • Cool completely before slicing.

Making the Glaze

  • Take a small bowl and mix all the ingredients of glaze well. Drizzle on top of the slightly cooled cake.

Notes

1 Egg Substitute = 1 tbsp flax meal dissolved in 3 tbsp warm water. Set it aside for 1-2 minutes. It develops egg like jelly structure to bind the ingredients.
