Golden and Delicious

Many of you must be thinking, what’s wrong with Sonal? One after the other, she is posting sweets recipes and not even attempting to improve on the traditional recipes in the areas of fat and sugar. So my dear friends, yes, it is still me…drenched in the season of festivities and the days of cooking and enjoying some traditional and improvised versions of Indian Sweets. After the post of Semolina and Almonds Treats, here is another one for Besan Laddoo, where Besan is Chickpea Flour and Laddoo is a round shaped sweet.

Melts in the mouth and warms up the spirit

I remember, my mom used to make a huge jar of either Besan Laddoos or Atta (whole wheat) laddoos, whenever it was time to leave for the boarding school, after the vacations. These sweets used to help overcome the homesickness in the boarding school. Just one sweetness worked as all the love of mom. I try, not very often though, making these traditional sweets at home for kids, husband and myself, just to remember the good old days. These little sweet something keep me connected to the country, family and culture from far away :). So it is okay, to indulge for the goodness sake :). Yeah that is me justifying all the ingredients here.

Nevertheless, this sweet treat is awesome and actually good in winters to keep you warm. Who says to devour all of it yourself or to make it in huge batch to keep indulging day after the other ;). Make small batches. If make more, share :). Well enough of blabbering. Here is the recipe. It actually needs very few ingredients…awesome!

Ingredients :

Ghee : 1/3 cup. Vegan friends can use coconut oil.
Besan or chickpea flour : 1/2 cup
Sugar : 1/2 cup or to taste. You can use sugar substitute as well
Cardamom powder : 1/4 tsp
Saffron or kesar : 8-10 strands
Almonds : 4-5 chopped in slivers or fine

Method :

Heat ghee in a heavy bottom pan over low flame.

Add besan and cardamom powder and saffron threads to the ghee. Roast besan or chickpea flour in ghee over lowest flame for 10-12 minutes while stirring continuously. Roast it till you can smell the roast flavor in air and flour is slightly pinkish. Brown means burnt ;).

Take it off the flame. Let it cool down completely at room temperature.

Once cooled completely, add sugar to the mix and mix it gently with the cooled flour with hands. Mix it thoroughly, it feels grainy to the touch.

Now take 1tbsp to 1&1/2 tbsp mixture in hands and press and roll to give it a round shape. Finish the mixture like this, making balls. It will yield about 8 balls or laddoos.

Press chopped almonds on top and enjoy.
