I was too impatient to wait until I could get to the store to get poblano peppers so I made this recipe with one large jalapeño minced after roasting it. Loved it and will make it again.

I first saw this recipe before Christmas and have been wanting to make it. I finally made it last night, and oh my goodness, it was SO GOOD!! The fresh lime really makes the dish. I’ll definitely be making this again! Anyone who hasn’t yet tried, you should! Oh, and my son thought it wasn’t spicy enough, so if the thought of it being too “hot” is scaring you off, don’t be! Poblano peppers are generally fairly mild.

Also, I had a few bites this morning, and the flavor is even better today!
