Slice eggplant into 1/2 inch rounds and set aside. Pre-heat the Air-fryer. Prepare the Breadcrumb Mix and Egg Bath. Set aside. Dip Eggplants slices in egg-bath and then roll in breadcrumb mix. Air fry till crisp. Take the airfryer basket out. Spread Pasta sauce on crispy eggplant slices and top with mozzarella cheese. Air fryer for few more minutes till cheese melts.
