The Peanut Dressing is homemade and is lighter than the store bought Salad Dressing. This salad makes a perfect lunch or a light meal to share with family and friends. The best part is that the salad is vegan as well as gluten-free.

CHOPPED ASIAN SALAD
- 2 Cups Lettuce Leaves chopped roughly into 1 inch squares
- 2 Cups Red Cabbage chopped roughly into 1 inch squares
- 1 Cup Green Cabbage Shredded
- 1/2 Cup Broccoli cut into small florets
- 1 Large Carrots Shredded
- 1/4 Cup Cilantro Leaves
- 3 tbsp Peanuts dry roasted
LIGHT PEANUT DRESSING
- 3 Tablespoon Peanut Butter
- 1 Large piece Ginger
- 1 Tablespoon Soy Sauce Use Tamari sauce for gluten free version
- 3 Tablespoon White Distilled Vinegar
- 1 Teaspoon Hot Sauce
- 3 Tablespoon Water
- 1 Tablespoon Lime Juice or Lemon Juice
- 1 Tablespoon Honey
Prepping Salad
Take a Large Mixing bowl. Add chopped lettuce + red cabbage, shredded green cabbage + grated carrot, Broccoli and Cilantro leaves. Use Salad Tongs and give it a good toss. Set Aside.
Light Peanut Dressing
Take a high watt blender like Nutri bullet or Magic bullet. Add all the ingredients as mentioned under the Peanut Dressing. Blend will they all turn into a smooth sauce or dressing.
