Easy Roasted Air Fryer Beets Recipe

Air fryer Beets are so good and addictive. These are easy to make and super healthy. Add these to your salads, as sides or as a snack in your meal plan.

Ingredients

  • 2 medium size Beets
  • 2 sprays Olive Oil Spray or use 1 tbsp olive oil
  • to taste Salt & Black Pepper

Instructions

  • Wash and Peel the Beets. And then cut these into 1-inch cubes. Try to keep the size of the cubed beets similar.
  • Then transfer these cubed beets to a mixing bowl. Spray with some olive oil or add 1 tbsp olive oil. Add salt and black pepper. Give it a good mix.
  • Now transfer the beets on the basket and spread it out evenly without overcrowding.
  • Air-fry at 400*f for 7-8 minutes till slightly crisp on the top. 
  • If you cut your beets in larger and thicker pieces or slices, then it will take more time about 15 minutes.

Oven Roasted Beets

  • Pre-heat the oven at 425*f. Spread the beets in a baking tray. Bake for 15-20 minutes till done.

How to make Buddha Bowl with Roasted Beets?

  • To make a Buddha Bowl with roasted beets, you need 1/4 cups cooked brown rice, 1/4 cup cooked beans of your choice (black eye beans in this recipe), chopped cucumber tomatoes, onion bell peppers & cilantro + roasted beets + pepita seeds. Top with the Dressing of your choice. I used thick Greek Yogurt, lemon juice, salt & pepper + hot sauce as a dressing for my bowl.

PRO-TIP 
  1. Since all the air-fryer models vary from each other, the timing to roast beets will differ too. The right way to know if they are done is by piercing 1 of the pieces with a fork. The inside should be fork tender inside and crisp outside. 
  2. You can easily double the recipe. Although you might have to do that in double batch.
  3. It is a simple recipe although you can jazz it up with the seasonings of your choice.
  4. You can use one kind of beet or different colors of beets together. The timing shall remain same.

How to make Vegetarian Buddha Bowl with roasted beets?

Making Buddha Bowl is so easy to put together. All you need for a Buddha Bowl is -
Grains - I have used Brown Rice here. You can use quinoa or any other grain of your choice.
Beans - This adds good protein to the meal. I love using variety of cooked beans like black eye beans, chickpeas, red kidney beans, black beans, lentils etc. 
Chopped Salad - a variety of fresh vegetables add needed fiber. I love using cucumber, onion, tomatoes, bell peppers to the bowl.
Roasted Beets - This antioxidant, nutrient rich vegetables add so much more goodness to your meal bowl. 
Garnish - Chopped Cilantro or Mint.
Dressing - I made the dressing with thick nonfat plain Greek Yogurt, salt, black pepper, lemon juice and hot sauce. Mixed all the ingredients together and done. You may use cilantro chutney, pickles and pickled juice, hummus or any dressing of your choice.

How to serve the roasted beets?

  • Serve the air fryer roasted beets as a side to any meal. They look gorgeous and will elevate the beauty of any dinner table.
  • I love adding goat cheese or feta cheese to the roasted beets. It tastes amazing.
  • Another great way to use the roasted beets is to add them to your salad of choice.
  • I love adding these to my Vegetarian Buddha Bowl too.
  • Or you can add them to the yogurt to make Indian Raita.

Do I have to peel the beets before air-frying?

Since we are air frying beets as small cubes, peeling is required for this recipe. If you are air-frying the whole beets, then no need. 

How long should I air-fry Beets?

Since we are air-frying 1-inch cubes of the beets, 7-10 minutes are sufficient. It depends upon how fresh or old your beets are. 
If you are air-frying larger pieces or slices of beets, then it can take up to 15-18 minutes. 
Check in between to make sure that these are fork tender in between.

How to store the left-over roasted beets?

You can refrigerate the left-over beets in airtight container for up to 3-4 days.

How to re-heat the air-fryer roasted beets?

 Although you can eat the roasted beets cold, but you can either microwave these or oven bake at 375*f for few minutes.
