Winter Vegetables
- Ginger - 1 tbsp finely chopped or grated
- Garlic - 1 tbsp finely chopped or grated
- Green onions / Scallions - 8 white and green part separated and chopped fine
- Green beans - 10 to 12 chopped in him slices
- Carrots - 2 medium size, chopped fine or grated thick
- Cabbage - 1 cup finely chopped or grated
- Cauliflower - 1 cup finely chopped into tiny flowers
Oil & Condiments
- Oil - 2 tsp
- Soy sauce - 2 tsp
- Corn starch corn flour - 1 tbsp dissolved in 2 tbsp water
- Water - 6 cups
- Salt - 1&1/2 tsp or to taste
- Black pepper - 1/2 tsp or to taste freshly milled (crushed)
NOTE - All the vegetables need to be chopped into similar size and shape, so that they cook evenly.
Heat 2 tsp oil in a sauce pan. Add ginger, garlic and white part of the scallions to it and saute for few seconds, till onions become translucent.
Now add all the other vegetables and saute for 2 minutes on medium low.
Add soy sauce and water. season with salt and black pepper and stir.
Add the dissolved corn flour (starch) and Stir.
Bring it to a boil. Reduce the heat to medium and simmer for 10 more minutes till the water is reduced by a cup or so.
The soup is ready. Garnish with green part of the scallions. Serve it warm.
Storage
Once it cools down to the room temperature, store in an air tight container in the refrigerator.
When ever, you want some, pour it out in a microwave safe bowl, warm it up for 2 minutes and serve warm. Or heat it up on the gas stove and serve.
