Air fryer kachori is so yum and a perfect tea time snack from Indian Cuisine. Detailed video is attached for reference. Kachori is Indian version of savory hand pies.

      Making the Dough for Kachoris

      • Take a Mixing Bowls and add All Purpose Flour or Maida and Salt to it. Mix well and add Cooking Oil & Vinegar. Mix the oil with the flour and rub with your fingers to get bread crumb type consistency. Start adding water, little at a time.
      • Make a soft dough, like that you make for chapati/roti. Set aside for 2 minutes and grease your hands a little and knead for another 2 minutes.
      • Place the dough in a glass bowl. Put the lid and let it rest for 1/2 an hour.

      Making the Matar / Green Peas Filling

      Now add thawed Matar / Green Peas to the pan. Mix well. Further add Garam Masala, Dry Mango powder, & Salt to the pan. Mix well. Cook on medium heat for 1 more minute. 

      • Switch off the heat. Take Potato Masher or a heavy ladle or a fork and mash the cooked peas filling coarsely. Set aside to cool it down to the room temperature before using.
      • You can prepare this filling a day ahead of time and refrigerate. Microwave a bit before using. This filling is great to stuff paranthas too.

      Preparing the Kachoris

      • WATCH THE WHOLE VIDEO FOR BETER UNDERSTANDING.
      • Divide the dough into 6 equal balls. 
      • Take a dough ball and stretch it out into 2 - 2&1/2 inch disc with hands. Place about 1&1/2 tbsp Matar filling in between. Bring the sides of the disc up to cover the filling. Seal the filling from all the sides tightly at the top. It will form a ball. Flatten it out gently in a disc, with your hands with slight pressure.
      • You can also prepare these using the rolling board and rolling pin. Prepare all the kachoris like wise. Brush them on the top with little bit of melted ghee and set aside.

      How to Air-Fry Kachoris?

      • Preheat the Air fryer at 360*F for 5 minutes. Place Air fryer Parchment Paper inside the air fryer basket. Further place 3 kachoris at a time in the air fryer. 
      • Air fry these for 15-20 minutes.
      • In between, flip them every 5 minutes and brush with melted ghee or cooking oil. It will give them beautiful color and keep them away from drying out while air frying. This is an important step. My kachoris were done in 16-17 minutes in Philips air fryer.

        How to Deep fry Kachoris?

        • Heat the oil in kadhai or wok at medium low heat. This is very important to get the right texture.
        • Take 1 flattened disc and roll it out a bit with rolling pin to even out. The disc should be thick. Do not roll it out too much. Rolling is to make sure that the filling is evenly distributed.
        • Now slide the rolled disc in medium hot oil.
        • The kachori should not surface to the top immediately. It needs to fry at low heat and will slowly puff and surface the top.
        • Flip the Kachori few times in the oil for even cooking. Fry at low heat till it becomes beautiful golden from both the sides. It will have a tough surface and few boils.
        • That indicates that kachori is done perfectly.
        • It takes about 5-6 minutes for each kachori to be fried properly.

        Tip - Fry 2-3 kachoris together, depending upon the size of your wok or kadhai. If you are frying 2-3 kachoris, then maintain the heat to medium.

        How to Bake Kachoris?

        • Preheat the oven at 375*F. Place the kachoris on a lined baking tray.
        • Bake these for 18-20 minutes. Flip them once in between for even cooking. 

        How is the texture of Air Fryer Kachori?

        When you make an air fryer version of a recipe, please understand that the texture will be different. Nothing good or bad about it. It is not like deep fried version. But it is delicious, flakey and really good. Do add vinegar to the dough for flakey texture.

        Can I make these Kachoris in advance?

        These kachoris are best when made and consumed the same day. You can make these and consume it the next day too. But do not keep them for long. This quantity will make only 6 and will be finished soon. Although you can prepare the Green Peas filling in advance and use when ready to air fry.

        How to store these Kachoris?

        First of all cool these down to the room temperature. And then store in an air tight container on the kitchen counter for 1 day. You can refrigerate it too. Re-heat in air fryer before eating.
