Rabdi Gulabjamun Cups No Cook Recipe

These Rabdi Gulabjamun Cups are super delicious and easy to make. Perfect to entertain a large group of guests. A great combination of 2 popular Indian desserts - Rabdi and Gulabjamun.

Equipment

Ingredients

  • 1 small tub / 15 oz Ricotta Cheese use original or low fat
  • 1 small can/ 14 oz Condensed milk
  • 1 tsp Cardamom powder or crush 6 pods of cardamom, remove shells & powder the seeds.
  • 1 tbsp Rose essence/Water used for cooking
  • 2 packets of 10 grams each Whip It You can find it in baking aisle although it is optional. See notes.
  • 1 tbsp Pistachio, unsalted, raw & shelled Chopped coarsely
  • 1 tbsp Almonds, unsalted, raw & shelled Chopped coarsely

      Prepare the Ricotta Cheese

      • Transfer the ricotta cheese to the clean Cheesecloth. Wrap it up. Place the cheesecloth wrapped ricotta in a Kitchen strainer. And then place it in a Mixing Bowl for 1-2 hrs. This will take out any extra water from the ricotta making it dry to use. Drier it is, better it is.

      Prepare Gulabjamun for the dessert cups

      • If you are making Gulab jamuns from scratch, then use those. Make sure to drain the syrup from all the gulabjamuns. They should be dry. You can use Kalajaam too. Set them aside.

      Prepare Nuts for Garnish

      • Take unsalted raw pistachio and almonds and chop them coarsely or finely on a Chopping board.

      How to make RABDI GULABJAMUN DESSERT CUPS?

      • Take a ziplock bag. Add Rabdi Mousse to it. Make 1 inch slit in a corner. It is ready to pipe. You can use a pastry piping bag too if you have it.
      • Now align the 14 Dessert cups in a line. Divide the Rabdi mousse equally in 14 dessert cups. Further place 1 Gulabjamun in the cup right in the middle. Finish all the cups likewise. Garnish all the Dessert Cups with chopped pistachio and almonds
      • Cover these cups with plastic wrap. Refrigerate for 1-2 hrs before serving. They are best enjoyed chilled.

      Can I make these in advance?

      Absolutely yes. These are best served chilled. Therefore make them a day ahead or few hrs before hosting.

      How long can you store these?

      These Fusion Diwali Dessert Cups stay in great condition for up to 1 week in the refrigerator. 

      Can I make it in any other flavor?

      Yes. You can flavor it with saffron instead of rose water.

      Can I double the recipe?

      This recipe yields 14 small dessert cups. You can easily double or triple it for larger groups.

      Is it healthy?

      LOL! NOOOO!! This recipe is pure indulgence and created especially for Diwali. So go indulge. 

      What are the ingredients of Rabdi Gulabjamun Cups Recipe?

      Gulabjamun - Use them drained from the syrup. Strain the syrup through a sieve and use. You can either make these at home or buy from the market. I used store bought HALDIRAM's GULABJAMUNS and they really  are so good. 
      Ricotta Cheese - You can use either low fat or original. Strain it through a cheesecloth for 1-2 hrs. 
      Condensed Milk 
      Cardamom Powder
      Chopped Nuts - Use pistachio and almonds
      Rose Water used in cooking or Saffron 
      Whip It Stabilizer - It is optional. I have used it to stabilize rabdi to create mousse like texture. You can skip it. And for the information, it does not have gelatin or agar agar. Bakers use it to stabilize whipped cream to use in baking products.
