Easy Air Fryer Roasted Vegetables Recipe
Delicious side of Vegetables roasted in air fryer is a game changer. Easy, Quick & takes under 30 minutes to put it together. Great side to any meal.
Servings: 4 people
- 1 small Onion chopped
- 2 cloves Garlic roughly chopped
- 1 small Zucchini cut into 1/2" half moons
- 10 small Mushrooms halved
- 2 mini Yellow Bell Pepper chopped
- 2 mini Orange Bell Pepper chopped
- 1/2 Green Bell Pepper chopped
- 1 small head of Broccoli chopped into small florets
- 1 tbsp Olive Oil
- 1 tsp Italian Seasoning
- To Taste Salt & Black Pepper

First of all, wash the vegetables properly in a Kitchen Colander and then pat them dry.
Now cut them into chunky pieces. Make sure to keep the size of all the vegetables similar in size.
Preheat the Air fryer at 380*F and then add the vegetables to it in a single layer. If you have a small air fryer, then you might have to do it in 2 batches. Air fry for about 5-6 minutes. Then stir the vegetables with Kitchen Tongs for even cooking. Cook for 4-5 more minutes till the vegetables cook and caramelize.
You may later sprinkle these with some parmesan cheese or even drizzle with some balsamic vinegar to enhance the flavors.
Serve these warm.
