Microwave Badam Katli

  • Gather all the ingredients - Saffron dissolved in warm water, almond flour, and sugar.
  • Dissolve crushed saffron in 1/4 cup lukewarm water. I microwaved the water for 15 seconds. And then added crushed saffron to it. Let it sit for 2 minutes
  • Take a microwave safe bowl and add all the ingredients to it. Mix well with a fork
  • Now microwave it for 4 to 4&1/2 minutes at the interval of 30 seconds each. Therefore there will be about 8 to 9 of these 30 seconds microwave rotations.
  • After every 30 seconds, take out the bowl. Mix all the ingredients together with a fork. Repeat this step every 30 seconds.
  • Do this process for 4 to 4&1/2 minutes till your mix starts thickening into a tight batter. At about 4 minutes, cool it a bit. Take a small portion out of the batter and roll it into a ball. If you can make a ball without any effort, then the batter is ready. If you can not form the ball, then microwave further for 30 seconds. It might take longer if your microwave is of a lower watt.
  • Once the batter is ready. Set aside for cooling for a few seconds. Meanwhile, spread out the parchment paper on your kitchen counter. Dump the Badam Katli Mix on it. Form a dough ball. Cover it with another sheet of parchment paper. I did not grease my parchment paper. If you are not sure, then use little ghee to grease. Or you can use coconut oil for the vegan option.
  • Roll it out with a rolling pin. It should be 1/8th to 1/4th of an inch thick. Katli is thin. Though you may keep it thicker if desired.
  • If you are planning to use Chandi Vark or Edible Silver leaf, apply it while it is still warm. Apply quickly. The Katli cools down very fast. 
  • Cut it into the desired shape. Diamond is a most popular shape for Katli. You may actually make fudge balls or Peda or Donut shapes also with the mix. It is like play dough and you can have fun with it. 

STORAGE

  • Once cooled, store in an airtight container at room temperature.

Instant Pot Badam Peda (watch the video attached)

  • Add almond flour and sugar to the inner pot of your instant pot or Mealthy multipot. Take a fork or stirring spatula and break any lumps in flour. Mix well.
  • Now add the water with soaked saffron in it. Mix well again.
  • Place the inner pot inside the IP or Mealthy multipot. Plug it in. Press the saute mode and set it to normal.
  • Stir continuously till the batter comes together in a tight batter, almost like loose dough. Watch video. Switch it off and transfer it immediately on a parchment paper.
  • Let cool for 5 minutes till ok to touch. Now pinch 1/2 tbsp size dough and roll between palms to make pedas. flatten a bit for the right peda shape.
  • If you are adding edible Silver foil to these, place it now.
  • Badam Peda or Almond Fudge is ready. Once cooled to room temperature, store in air tight container in the refrigerator.

STOVE TOP BADAM KATLI OR BADAM BARFI METHOD

Stove Top Badam Katli is pretty simple too. Combine all the ingredients in a heavy bottom pan. Cook on medium heat till everything comes together. Keep stirring. Follow the rest of the instructions from above.

Chandi ka Vark is an Edible Silver Leaf which is very thin and fine. Vark or this edible silver leaf is symbolic to festivities and celebrations. It does not have any taste. The Vark is also called as Zarda in Urdu.
Vark is applied on top of the dessert while it is still hot/warm or it won’t stick. Now, you do not have to use it. The recipe will still taste amazing without the use of Vark.
