5 days of Diwali celebrations started yesterday. For a long time, I have been making all the Diwali Snacks and Sweets at home including Poha Chiwda, Corn Chiwda, Air Fried Salted Nuts, Baked Kachori, Barfi and much more.

And I am so pressed for time this year that making some festival goodies is beyond me. It is already the 2nd day of the festival and I have managed to make just 1 Mithai (Indian sweet).

Nonetheless, the excitement of Diwali is building up. And who knows I might end up making more goodies in just a blink of time.

Badam Katli – 3 Ingredients Microwave Recipe

What is Katli?

Katli is a kind of fudge made with nuts powder and sugar syrup. It is much thinner as compared to the original fudge and is drier too.

The most common Katli are Kaju Katli made with Cashews. And then there is Badam Katli made with Almonds.

Traditionally, we grind the nuts into a fine powder and then add to the boiling sugar syrup. Once the mixture thickens,  collect the mixture together like a dough. And then you roll it out thin and immediately cut into pieces.

Any kind of Katli is usually shaped into Diamond.

We can flavor this Almond Katli with – Saffron, or Cardamom powder, and sometimes with Rose essence also.

Badam Katli is then decorated with Chandi ka Vark.

What is Chandi ka Vark?

I get asked this question often as what is that aluminum tin/foil thing on top of your dish. Why do you use it? Do you have to use it?

Chandi ka Vark is an Edible Silver Leaf which is very thin and fine. Vark or this edible silver leaf is symbolic to festivities and celebrations. It does not have any taste. The Vark is also called as Zarda in Urdu.

Vark is applied on top of the dessert while it is still hot/warm or it won’t stick. Now, you do not have to use it. The recipe will still taste amazing without the use of Vark.

Mix well with a fork

  1. Place it in the Microwave. And microwave for 30 seconds for 4 to 4&1/2 minutes. Take it out every 30 seconds and mix with a fork. Microwave again.

Microwave for 30 seconds each time till 4 to 4&1/2 min

Mix well each time with a fork

  1. After 4 to 4&1/2 minutes, the mix will thicken. It depends upon the power of your microwave. Therefore we are taking it out and mixing after every 30 seconds.

At about 4 minutes, see if you can make a small ball out of the katli mix. If you can, then it is ready. And if the batter is still not ready, microwave for 30 seconds more.

Make a ball with the mix to see if it is done

Spreading & Shaping Badam Katli

  1. Spread out the parchment paper on the working counter. I did not grease it. You can grease it with little ghee. For Vegan option, use coconut oil for greasing.

Now, take out the ready batter and place it on the spread parchment paper.

Take out the batter on Parchment paper

  1. Collect the Almond Barfi Mix and make a dough.

Collect the mix to make the dough

  1. Cover with another piece of parchment paper. Roll it out thin about 1/8th of an inch or 1/4th of an inch with a rolling pin.

Roll it out

  1. If you are using Chandi ka Vark or Edible Silver Leaf, then apply it now, till the katli is slightly warm. Or else, it won’t stick. This is a fast process. Once cooled slightly, cut it out into 1&1/2 inch diamond shape. Katli is ready.

Apply vark

STORAGE of BADAM KATLI

It is good to be stored at room temperature in an airtight container.

Use the same recipe to make BADAM PEDA in INSTANT POT.

Yes absolutely, it can be easily made in Instant Pot. Just combine everything together and cook on saute mode normal. Keep stirring. Cook till all the mix combines together in a thicker batter. Take it out. Follow the rest of the instructions as mentioned above.

Stove Top Badam Katli or Badam Barfi Method

Stove Top Badam Katli is pretty simple too. Combine all the ingredients in a heavy bottom pan. Cook on medium heat till everything comes together. Keep stirring. Follow the rest of the instructions from above. WATCH THE VIDEO ATTACHED.

  • Instant Pot 6 quart or Mealthy Multipot
  • Measuring Spoons, Measuring Cups, Stirring Spoon,
  • Kitchen Stirring Spoon
  • Microwave Safe Bowl

Ingredients

  • 1 cup Almond Flour I use Bob's Red Mill. Use any brand
  • 1/3 cup Sugar regular
  • 2 fat pinches Saffron crushed
  • 1/4 cup Water

Instructions

Microwave Badam Katli

  • READ THE FULL POST FOR ALL THE OPTIONS. AND STEP BY STEP PICTURES ARE POSTED ABOVE FOR BETTER UNDERSTANDING.
  • Gather all the ingredients - Saffron dissolved in warm water, almond flour, and sugar.
  • Dissolve crushed saffron in 1/4 cup lukewarm water. I microwaved the water for 15 seconds. And then added crushed saffron to it. Let it sit for 2 minutes
  • Take a microwave safe bowl and add all the ingredients to it. Mix well with a fork
  • Now microwave it for 4 to 4&1/2 minutes at the interval of 30 seconds each. Therefore there will be about 8 to 9 of these 30 seconds microwave rotations.
  • After every 30 seconds, take out the bowl. Mix all the ingredients together with a fork. Repeat this step every 30 seconds.
  • Do this process for 4 to 4&1/2 minutes till your mix starts thickening into a tight batter. At about 4 minutes, cool it a bit. Take a small portion out of the batter and roll it into a ball. If you can make a ball without any effort, then the batter is ready. If you can not form the ball, then microwave further for 30 seconds. It might take longer if your microwave is of a lower watt.
  • Once the batter is ready. Set aside for cooling for a few seconds. Meanwhile, spread out the parchment paper on your kitchen counter. Dump the Badam Katli Mix on it. Form a dough ball. Cover it with another sheet of parchment paper. I did not grease my parchment paper. If you are not sure, then use little ghee to grease. Or you can use coconut oil for the vegan option.
  • Roll it out with a rolling pin. It should be 1/8th to 1/4th of an inch thick. Katli is thin. Though you may keep it thicker if desired.
  • If you are planning to use Chandi Vark or Edible Silver leaf, apply it while it is still warm. Apply quickly. The Katli cools down very fast. 
  • Cut it into the desired shape. Diamond is a most popular shape for Katli. You may actually make fudge balls or Peda or Donut shapes also with the mix. It is like play dough and you can have fun with it. 

STORAGE

  • Once cooled, store in an airtight container at room temperature.

Instant Pot Badam Peda (watch the video attached)

  • Add almond flour and sugar to the inner pot of your instant pot or Mealthy multipot. Take a fork or stirring spatula and break any lumps in flour. Mix well.
  • Now add the water with soaked saffron in it. Mix well again.
  • Place the inner pot inside the IP or Mealthy multipot. Plug it in. Press the saute mode and set it to normal.
  • Stir continuously till the batter comes together in a tight batter, almost like loose dough. Watch video. Switch it off and transfer it immediately on a parchment paper.
  • Let cool for 5 minutes till ok to touch. Now pinch 1/2 tbsp size dough and roll between palms to make pedas. flatten a bit for the right peda shape.
  • If you are adding edible Silver foil to these, place it now.
  • Badam Peda or Almond Fudge is ready. Once cooled to room temperature, store in air tight container in the refrigerator.
