Unroll the Puff Pastry on a smooth surface or a large chopping board. I prefer unrolling it on top of a parchment paper. This makes the handling of delictae puff pastry easy. I would highly recommend it.
Spread out a thin layer of Pizza Sauce on top of the Puff Pastry. Leave the sides of the pastry dry. Do not apply a thick layer of the sauce or it will get very messy.
Further spread the mozzarella cheese and parmesan cheese on top of the sauce evenly. I highly recommend using low moisture grated mozzarella cheese for this recipe.
Now gently roll the Puff Pastry starting from the smaller side. Roll it very delicately. Parchement pape under the sheet will help you roll it. It can be slightly messy though.
IMPORTANT - Now this is a very important step. Either FREEZE the roll for 40-50 minutes or REFRIGERATE for 2-3 hours. Do not cut it immediately. Since puff pastry is delicate and the filling is soft, it will get messy if you cut it immediately. This step makes it so handy to prep in advance and air fry/bake when ready to eat.
Take the Puff Pastry roll out and gently remove the parchemnt paper. Further cut it in 1/2 inches thick slices. You will get about 15-16 slices. Further brush the top lightly with oil and sprinke Italian seasoning.

Tips and Tricks

- Make sure to keep the toppings to minumum and spread as evenly and flat as possible.

- Do not use raw fresh vegetables. These will leave water as the puff pastry cooks and make it soggy instead of crispy.

- Freeze or Refrigerate before cooking. This is a very important step. Do not skip it please or it will be a mess.

- Although brushing with oil and sprinkling with Italian seasoning is optional, but it adds to the flavors and crisp up beautifully. Do add this.

- Serve - These taste amazing with some warm marinara sauce on the side.

- Storage - These store well in the refrigerator for upto few days. When ready to eat, take out and air fry or bake in oven for few minutes at low temperature.

- Puff Pastry - Although I use refrigerated Puff Pastry Sheet from the grocery store, you can use frozen puff pastry as well. In that case, thaw the pastry first and then use. In case you can't find puff pastry sheet, you can use refrigerated crescent rolls too.

- Pizza Sauce - Since Pizza Sauce is thicker in consistency, I use this for the Pizza Pinwheels Recipe. If you do not have the pizza sauce then you can use thick consistency pasta sauce. Although I would highly recommend Pizza Sauce for this recipe.
