Mushroom and Garlic Fried Rice : for all you mushroom and garlic lovers :)

There is is a downside of creating a dish in the evening and then taking the pictures in the artificial light…. It’s just not it :(… Well I had made a small portion and if I had waited for the morning to take the pictures of the dish…it would have be gone and I would have been clicking the pictures of an empty bowl..lol…nonetheless, it was delicious and the garlic and mushroom flavors with robust amount of black pepper, just danced in my mouth. Hey Anitha,…. You reading this? This is for you :).

I always have leftover rice in my fridge ad eating them plain every time is too boring. This is one rice dish which is not complicated and calls for only few ingredients..no added spices besides black pepper and salt…so if you have mushrooms and garlic at home….get cooking with your left over rice… Dress your white rice :). Oh that’s an idea to throw….do leave a comment about how you dress your leftover rice ;)…

Ingredients :

Oil : 1/2 tbsp
Onions : 1/2 cup chopped fine
Garlic : 1 tbsp chopped chunky
Green onions or scallions : 1/2 cup chopped, optional
Mushrooms : 1 cup chopped
Rice : 2,cups cooked. If a day old, then better.
Cilantro : 1/4 cup washed and chopped, optional
Black pepper : 1/2 tsp
Salt to taste

Method :

Heat oil in pan. Add onions and garlic and cook till brown a bit one dim heat.

Now throw your mushrooms, green onions or scallions and cook for 4-5 minutes till mushrooms get soft and tender and change their color to brown.

Now add black pepper and salt. Mix well. Add rice. Gently fold the rice and the vegetables together.

Cover the lid of the pan and let cook on simmer for 3-4 minutes till rice is married well into the vegetables.

This simple and amazing rice is just wow and delicious to the core. Enjoy it warm :).

    Mushrooms+ Garlic! Mmmm.. I’m going to wait for the next time the hubby is away (he doesn’t like mushrooms) so I can make this for myself and hog it! 😀

    I got to try this soon..got leftover rice and mushrooms. I usually end up making lemon rice with left over white rice.

      I usually do Chinese style stir fry or tawa pulav or tamarind rice from mTR

    Yumm… I treat my leftover rice pretty much the same way.
    Othe times, i just add onion tomato and grated carrot… with a south indian tempering – you know the usual urad dal mustard seeds, green chili, curry leaves… taste nice too.
