- 6-8 Baby Eggplants
- 2 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Red Chili powder
- 1/4 tsp Garam Masala
- 1/2 tsp Fennel powder
- 1/2 tsp Dry Mango powder/Amchur/Khatai
- To taste Salt
- 1&1/2 tbsp Water
- 1 tsp Cooking Oil Mustard oil preferably
Alternatively - Use 1 tbsp of Curry Powder + 1 tsp Lemon Juice and mix in place of the spices mentioned above.
