Quinoa Garden Salad with Lemon Mustard Dressing

Lately I have been experimenting with Quinoa more and more. I have couple of recipes and ideas lined up in “my head” but still have to put it through “my pan”. In the quest of discovering Quinoa in different avatars, this is my first…err second spin actually. There is one more recipe of Quinoa Salad on my blog, which I posted last year and was super duper tasty with the cumin dressing.
It is a garden salad with quinoa added to make it a complete meal. An ideal salad for lunch which makes you feel full but not heavy! Isn’t that awesome? And moreover you get an extra boost of protein without any dairy or meat…making it desirable to vegans also.
Here I share this simple and delicious recipe of Quinoa Salad! The best part is that your 8 plus year old child can make this salad by herself/himself provided you give them cooked quinoa :). A great activity to do with your child!
Serving : 1 big or 2 small
Ingredients :
Quinoa : 1/2 cup cooked
Chickpeas : 1/4 cup cooked
Lettuce : 2 leaves torn or chopped
Red radishes : 2 sliced in discs
Cucumber : 1/4 cup chopped
Tomato : 1/4 cup chopped
Onion : 1-2 tbsp
Carrots : 1/4 cup chopped
*Lemon mustard dressing : 1/2 tbsp
Salt to taste
Lemon juice : 1-2 tbsp
Paprika : a dash
*Note : In case you don’t want to make the dressing, then use some olive oil, mustard sauce and black pepper to taste.
Method :
I am feeling shy to write the method now ;).
Take a bowl. Add all the ingredients and give a good toss. Pour in a salad bowl, get your fork and dig in :).
