Cooking Indian : Pantry Essentials Part 4 – Garam Masala Recipe

In continuation to my earlier posts related to Indian Cooking and the Pantry Essentials, I have prepared this recipe of Garam Masala, home made, to share with all the viewers. Hope it will help.
Garam Masala is an Indian version of All Spice. It is a must have spice, when cooking Indian food. It not only adds the flavor and aroma to the dish but also a nice texture. You can buy it from the Indian grocery store as readymade from different companies like MDH, Shaan, Badshah, Laxmi, Nirav etc. You can also make a homemade version of it and keep it in an air tight container and store in a darker and cooler spot in your pantry or fridge. It is used in combination with the basic curry masala that I posted in part 3 of Indian Cooking:Pantry Essentials. For link, click Basic Curry Masala
Without much ado, here is the recipe for it :).
Ingredients :
Cumin seeds : 2 tbsp
Coriander seeds : 2 tbsp
Black peppercorns : 1/2 tbsp
Cloves whole : 1 tsp
Dry whole red chili : 2
Bay leaf : 3 small
Cinnamon stick : 1″ stick
Black cardamom : 2
Method :
Roast all the ingredients in a pan on low to medium flame for 2-3 minutes till you smell the aroma, while keep stirring.
Take off the gas stove, cool it.
Put it in the grinder and grind fine.
Store in air tight container.
Note : Garam Masala is not used in heaps, since all the ingredients are hot in nature. Use tea spoon measurements with it instead of table spoon. Since it is roasted, it can be added later also, when the dish is ready, as per the taste.

i use garam masal too much .we have it back home
and i love indian cusine
That is awesome Amal :). I don’t cook anything without garam masala either. It just jazzes up the dish but it can be overwhelming to newbies ;)..
