M&M Chocolate and Nuts Soft Cookies, Eggfree and Butterfree! A last minute treat for the kids.

My blogging is slow these days but not complaining. It is a much needed slow down. But I am reading everybody’s post that reaches me through email. If I am not commenting or liking, it is just too much distraction but I promise I will get back to all of it soon. :).

My oldest had one cookie left and she gobbled it up without sharing it with the little one. Little one saw the big sister eating cookie and there she went on the floor with a big tantrum and crying! All she wanted was “more cookies than didi”. (Didi means big sister). Dinner was over and I was winding the kitchen. She didn’t let me finish winding up and I had to make the cookies pronto! No recipe in hand but just a random idea and some nice soft warm good looking cookies were ready. Healthy? Yes :). Made eggfree since mum in law doesn’t eat eggs. Made butterfree since thought of using almonds, natural source of good fat!

An easy, no brainer and a quick recipe.
I made them soft, you can bake them crispier by baking for longer.

Yields : 20 small cookies

Kitchen Equipments Required : bowl, fork, cookie baking tray, oven, butter or parchment paper.

Ingredients :

Whole wheat flour : 3/4 cups. You may use all purpose flour.

Cocoa powder, unsweetened : 1/4 cup

Almond meal : 1/2 cup. I make it at home by processing the almonds in food processor till fine.

Sugar : 1/2 cup + 2 tbsp. You may use brown sugar or stevia or agave nectar or Splenda. Adjust the quantities accordingly since they are different in their sweetness levels.

Baking powder : 1/2 tsp

Baking soda : 1/4 tsp

Salt : a pinch

Milk : 1/2 cup

M&Ms : handful. Use cadburry’s gems instead if M&Ms are not available.

Method :

  1. Preheat the oven at 350*F. Line a baking tray with parchment or butter paper.

  2. Take a bowl and add whole wheat flour, almond flour, coco powder to it. Add all the other ingredients too. Mix with a fork. The mix will be a thick batter consistency.

  3. Add 1 to 1$1/2 tbsp of batter on the tray for 1 cookie, 2 inches apart from each other. Top each with few M&Ms.

  4. Bake for 12-13 minutes for soft cookies. If you like crispy cookies then bake for 16-18 minutes.

  5. Take them out. Let them cool on the baking tray for 8-10 minutes. Then transfer them on the wire rack.

Note : Almond meal release natural fat in high temperatures so that fixes the questions on “No fat ?”

My half of the cookies were gone from the tray itself, as soon as they came out of the oven. These were warm and melt in the mouth. I was so happy between so many happy faces and warmed hearts ! Mum in law and pa in law loved these cookies. My father in law is diabetic and doesn’t have a sweet tooth but he loved these. Initially, he took a small bite and then went back for some more. Then he compensated with more walk the next day!
