My girls couldn’t keep their hands off it. I knew that they would behave like this, so I made it when they were at school and took the pictures while they were gone.

I didn’t tell them about this yummy treat till late until I couldn’t hold it anymore. Come on…just look at it! Which child would not drool over it? This is the work of a good witch craft , filled with loads of love, a good amount of magic and a great deal of notorious mind!! 😈😂

If you know me then you are probably aware that I am not much of a promoter of junk food eating habits among children. Given the sedentary life styles of the children these days, we can see a lot of children and juvenile diseases cropping up fast.

But that doesn’t mean that we can’t treat our munchkins with some fun treats once in a while. I strongly believe in striking a balance in our eating habits and the life style we choose to lead.

I prepared these and made sure that I ration these, only 1 square per day. The kids agreed and I was a happy mother.

This 3 Ingredients Marshmallow Chocolate Fudge is quite decandent and pretty calorie laden. If you want to believ me, I haven’t touched even a single piece of it. I can totally see where it would attach on me – the love handles.

The happy faces of my kids and non nom noises while biting on it, told me the whole story of its texture and flavor. Can you imagine that – closed little eyes lost in candy land when chewing on the fudge? Must be an eternal feeling! ☺️..

It is one of the easiest “ever” recipe. This recipe doesn’t even require any stove top cooking. Little bit of microwaving and then a momentary oven play, refrigerate to set and Ta-da 👏👏👏👏… Deliciousness is ready to be devoured.

3 ingredients include – chocolate blocks or chips, condensed milk and marshmallows.

The 3 steps required to make this fudge are –

  1. Microwaving the chocolate and condensed milk.

  2. Spreading the fudge in a lined pan and then layering with marshmallows. Broiling the pan in oven to let marshmallows set.

  3. Refrigerate for 3-4 hours to let the fudge solidify. Cut and Eat.

Easy & Quick 3 ingredients Chocolate Fudge recipe.
Ingredients
  • semi sweet chocolate chips - 2 cups. You may use dark chocolate or bitter chocolate or combination of any.
  • Condensed milk, low fat - 1 & ⅓ cup
  • Marshmallows, small - 2&1/2 to 3 cups
Instructions
Line a baking tray of size 7x11 inches with a parchment paper. You may also use a rectangular pyrex glass (baking) container.
  1. Take a microwave safe large bowl. Add chocolate chips and condensed milk. Warm on high for 1 minute.
  2. Take the hot bowl out carefully and mix the chocolate chips with condensed milk with a fork or spoon. Mix till all is incorporated well. The warm bowl and slightly melted chips and heated condensed milk will make a nice shiny chocolate batter.
  3. Pour it on the lined paper in the pan/tray and spread evenly with a butter knife.
  4. while it is still hot, place the marshmallows next to each other on top of the hot chocolate batter.
  5. Put the oven on broil/grill. Place the oven safe tray in and watch it till marshmallows swell up and have slight cracks on the top.
  6. Take it out immediately. Do not over do it. It takes lees than a minute to do that, depending upon the size of your oven.
  7. Let it cool down till room temperature and then refrigerate it (uncovered) for about 3-4 hrs.
  8. Take the tray out and remove the fudge block from the tray and place on chopping board. Cut it out in small squares of your size. 1x1 inch square is a good size and even 2x2.
Storage
  1. If you make it in summers, refrigerate it in air tight container.
  2. If you make it in winters, it shall be good outside but I would still suggest refrrigerating.
  3. Let it rest for 1 minute before eating.
Notes
If you are particular about the gelatin in marshmallows, then use vegan marshmallows from the market.

This Sunday was dedicated to the holiday baking along with kids. As much as I dote on my girls, their “help” freaks me out! The good mother inside me says, “Ah well! They are kids. Get them involved in holiday baking”. The next minute, my OCD side kicks in and yells at me “Are you in your senses? Holiday Baking and kids? What about the mess and the clean up later and not to forget their constant bickering while helping.” The Libra in me comes to my rescue and says, “Cool down! You can do it! After all it’s about making memories. Get the kids clean up later under your supervision”. And I sweat and fret and call out to them, “Girls, holiday baking time! Let’s start it” and the madness starts.

But I am telling you, amidst all the craziness and mess, it’s all fun with some madness, some yelling, lot of laughter and loads of licking spoons and specks here and there. And the best part is when they line up to lick my cookie dough covered fingers. 😂

 

I came across this recipe in a Chocolate book and adapted it to create these crisps after 1 failed attempt. To my good luck, the adapted recipe worked well and the crisps are just perfect to eat with a cup of coffee or tea. No eggs, Light, Crispy and oh so delicious.

 

This is how I made it!

Chocolate Walnut Crisp Biscuits, Eggless

  • Servings: 18-20 Biscuits

Kitchen Equipments Required

A big mixing bowl, 1 stirrer or whisk, fork or pastry cutter, chopping board and knife to chop the walnuts, a plastic wrap, 2 cookie trays, parchment or butter paper, oven.

Ingredients

All purpose flour – 1/2 cup

Coco powder, unsweetened – 1/2 cup

Sugar – 1 cup

salt – a pinch

Baking Powder – 2 tsp

Butter – 4 tbsp, cold and cut into small cubes.

Milk, cold – 3 tbsp

Walnuts – 1 cup, chopped roughly

Method

  1. Take the big mixing bowl. Add flour, sugar, coco powder, salt and baking powder. Mix all the ingredients well.
  2. Add the cubed cold butter to the flour. Incorporate it well in the floor either with hands or with pastry cutter or fork. When it is well mixed, the flour mixture will start looking like a bread crumbs.
  3. Add coarsely chopped walnuts to the flour and mix.
  4. Start adding milk, 1 tbsp at a time. It should take 2 tbsp to 3 tbsp milk to bring the flour mix together in a crumbly dough.
  5. Take a big piece of plastic wrap. Drop the crumbly dough in the middle of the plastic wrap. Shape it roughly in a long log. Bring the crumbs together. Wrap the plastic tightly around the dough, from the 2 long sides and then 1 short side. Continue shaping the log evenly by pressing it down gently with hands. It should roughly be 2 inches x 10 inches long. Close the 4th side of the plastic wrap tightly around the dough.
  6. Keep it in the refrigerator for at least 1 hour. You can store the dough like that for 1 day or overnight to bake later.
  7. When ready to bake,  Preheat the oven at 375*F / 190*C. Line the cookie trays with parchment or butter paper.
  8. Take the chocolate walnut log out. Cut 1/2 inch thick slices out of the log. It should give approximately 18-20 slices.
  9. Lay these chocolate walnut slices on the cookie tray, at least 2 inches away from each other.
  10. Bake these chocolate walnut crisp biscuits for 12-15 minutes. They will expand as they bake and become crispy thin.
  11. Take the cookie trays out. Let the crisps be on the trays for 2-3 minutes and then transfer to wire racks for cooling.
  12. Once cooled to room temperature, store them in air tight containers. These make excellent gift for holidays or a great hostess gift as well.

Notes

  1. You may use any kind of nuts in this biscuit like hazelnut or macadamia or pecans.
  2. These store well at room temperature for a week or so. They won’t last that long either ;).
  3. The dough can be frozen and when ready to bake, just slice and bake.
