Vegetable Fried Rice with Grilled Tofu Salad

By now most of you know my love for stir-fries. Every time, I have left over rice in my fridge, stir fry is the meal next day. It is full of vegetables and the tongue licking combination of soy sauce and ginger and lime juice. This is what i had for lunch today. Can you beat the fact that it is ready under 15 minutes. So the trick is always cook some extra rice to enjoy stir fries the next day ;).

If few of you have seen this post before, then again, I am bumping it up from my old archives while holidaying at the coast of Atlantic with family.

Simple as a jiffy and tasty as ever :).
Let’s get rolling ! Here is how :

Ingredients for Rice:

Cooking Oil : 1 tbsp
Cooked Rice : 1 & 1/2 cups
Soy sauce : 1/3 cup
Salt : to tatse
Black pepper powder : to tatse
Red onion : 1/2 cup
Ginger : 1 inch piece chopped
Garlic : 2 cloves chopped
Green onion : 1/4 cup
Bell pepper : 1/4 cup (any color)
Mixed vegetables : 2 cups.
(I prefer the Rainbow salad from the fresh selection of the grocery store which has broccoli and cauliflower rib, carrots and red cabbage shredded. I always keep it handy for my stir-frys with rice and noodles. But you can take any mixed vegetables of your choice, fresh or frozen).

Ingredients for Grilled Tofu Salad:

Tofu/Bean Curd : 6-8 big cubes ( firm or extra firm kind)
Tomato (firm and meaty) : 6-8 big chunks as the size of tofu
Soy sauce : 1 tbsp
Tomato Ketchup : 1 and 1/2 tsp
Ginger : 1/4 tsp (grated)
Thai Basil or Cilantro : 1 tsp chopped (optional)
Lime or lemon juice
Party picks or tooth picks

Method for Stir Fry Rice:

Take a broad pan or wok. Add 1 tbsp oil to it. Heat the oil. Add onion, ginger and garlic to it. Sautรฉ for a minute and then add mixed vegetables. sautรฉ together for a minute. Add cooked rice and soy sauce. Mix well with a light hand. Cover the pan and let it cook for 2-3 minutes on low flame. The fried rice is ready.

Method for Grilled Tofu salad:

Mix soy sauce, grated ginger, tomato ketchup together and whisk well. Skew the tofu cubes and tomato chunks together in a toothpick or you can put them in a kebab skewer also.
Take a non stick pan. Put it on medium flame. Add the soy sauce mix in the pan and warm it up. When it heats up, add the tofu and tomato skewers in the hot sauce. coat them well and grill on all the sides for couple of seconds. Take them off and mix well with chopped thai basil or cilantro/corriander and lime juice. A yummy side dish is ready.

Note: Paneer can be used instead of Tofu.
