Bookmark it, I promise you will come back to it again and again. I have adapted this recipe from Martha Stewart’s Recipe of Easy Waffles. You can’t beat it, when a batch of waffles can be made in under 30 minutes from start to finish. Yup, it is that easy and quick and can I mention – efficient as well!
If you ask me, what is a Waffle? Then for me, waffle is that piece of small checkered comfort, when it dissolves in the mouth with some butter and maple syrup, it just sweeps you off your feet, leaving you in food heaven.
But what is a Waffle? Waffle is a leavened batter or dough, cooked between two patterned plates for the desired shape, size and surface impression. There are numerous types of waffles made depending upon the type of waffle iron used and the recipe incorporated. [1]
Belgium is the country with numerous varieties of Waffles.
Waffles’ origin is to be believed since 9th and 10th century in Medieval Period. They were prominently eaten in Medieval Europe and were known by different names in different regions. Some common names to recognize these were waffe, wafer, waufre, etc. [1]
Though the original recipe of waffles calls for a Leavened Batter, where either yeast or poolish is added to the batter a night before and left for proofing. That makes the best crunchiest and fluffy waffles ever. Recipe will be coming up soon. This particular recipe is amazing for the times, when actually time is the constraint and the planning is out of the window.
Easy Waffles {Eggless Home Style} are the perfect waffles for those times. These are good for the people who are off the eggs for either dietary restrictions or are allergic to the Eggs.
I always use Flax Meal to replace Eggs in a recipe, especially, pancakes, waffles, tea cakes or muffins. This substitute never fails me, rather add a much nutritious value to the recipe, since Flax is rich in fiber and other nutrients.
For Every 1 Egg, I use 1 tbsp of Flax Meal dissolved in 3 tbsp of warm water.
Few facts about Flax
- Flax is known as Common Flax or Linseed. It is known as “Alsi/Ulsi” in Hindi. This is how Flax is known by different names in different languages .
- Flax is easily available in the market, either as a seed or a meal (coarse flour form).
- In case you do not find Flax Meal, buy Flax seeds and coarsely grind in your grinder. Store in refrigerator in an air tight container.
- The Flax meal when combined with warm water, forms a jelly like structure which is great as binding agent just like an egg.
- The flax meal needs to sit in warm water for about 2 minutes for perfect result.

My kids loved the waffles plain and I added some dried cranberries and blueberries in the batter, for Amit and I. The juicy berries added delicious burst of flavors in each bite.
You can make a batch and refrigerate for a week, wrapped in a foil or a container. I do that all the time with pancakes and waffles. Its just so handy to take out, warm it and eat. Refer to the notes for more information on that.

Easy Waffles {Eggless Home Style}
Ingredients
- All Purpose Flour - 2 cups
- Baking Powder - 2 tsp
- Sugar - 1/4 cup
- Salt - 1/4 tsp
- Milk - 1 & 3/4 cups preferably at room temperature or lightly warm in microwave for about 30 seconds.
- Butter - 6 tbsp melted and cooled at room temperature
- Flax Seed Meal - 2 tbsp dissolved in 6 tbsp of warm water
Instructions
- Take a bowl and add flour, baking powder, salt, sugar to it. Mix well with a fork and set aside.
- Take another bowl and add milk and flax meal to it. Stir together till nicely mixed. Add butter and stir vigorously with a whisk to mix.
- Add the liquid part to the flour mix. Mix well with a whisk or fork or mixing spoon.
- Heat the Waffle Iron or Waffle Griddle as per the manufacturer's directions.
- Grease the iron with butter nicely.
- Take 1/4 cup of the batter and pour in the middle of the iron.
- Close the waffle iron. It will automatically spread the batter out in all the directions. I got the snowflake shape of the waffle since I used lesser batter than required. You may use 1/2 cup batter for fuller and even shape and move the iron around to spread it in all the directions evenly.
- Cook till the waffle iron indicates done. Every Waffle will take 2-3 minutes. For crispier waffles, leave them for an added minute.
- Take the Waffle out, sprinkle with some dry cranberry and blueberry and almond flakes. Drizzle good with Maple Syrup.
- Eat while HOT!
Storage
- If you have extra leftover waffles, Store them in refrigerator after cooling at room temperature.
- Whenever you want to eat, take out and warm in either oven grill or OTG on grilling OR half them and warm up in Regular Bread Toaster till crisp and serve.
