Meatless Mondays : Home Made Refreshing Salsa

It’s Monday again :). It’s bright and sunny and crisp outside. Makes me a happy chica ;). Sunny days call for some tangy, spicy, refreshing and crispy flavors! A scoop of crispy nacho dipped in some fresh home made salsa. There is nothing better than that! A tango with salsa ;)…

Meatless monday is the best day for me to introduce this flavor. An excellent dip which goes so well with any kind of spread, any kind of meal, any time of the day, any kind of mood, any type of company and just anything! Can you believe it? One dip and so much of company. Sounds like a tag line for some Salsa advertisement. Ain’t it?

Here is a no fail and no nonsense recipe! Let’s roll!

Ingredients :
Tomatoes : 2 medium, plum or on the vine, juicy ones, chopped roughly.
Onion : 1/2 cup, chopped roughly.
Garlic : 3-4 pods
Jalapeño : 1-2 or use any other green chili as per taste, chopped roughly.
Cilantro leaves : 1/4 cup, chopped
Lime juice of 1 juice: 2-3 tbsp
Salt to tatste
Cumin powder : 1/2 tsp
Vinegar : 2 tbsp
Sugar : 1/2 tsp, optional

Method :

No Rocket Science at all !!

Take a food processor and add onions, garlic, chopped jalapeño, and chopped cilantro. Blitz and blitz and blitz. That’s it! Take it out in a bowl.

Now blitz the tomatoes in the food processor….just mush! Add to the onion bowl.

Add lime juice, salt, cumin powder and vinegar. If using sugar, add now. Mix well.

Store in the bottle and refrigerate. It will be good for sometime in the fridge. Enjoy with what so ever :)).
