Air Fryer Peas Puff Pastry Matar Patties

These spicy Green Peas Patties made with puff pastry sheets are delicious and super easy to make in AIR FRYER. Perfect tea time snack.

Instructions

Gather & Measure all the ingredients & set aside. Watch the video for better understanding. Always red the NOTES section for more options.

  • The recipe is divided into 3 parts - preparing the Peas stuffing, preparing the puffs/patties, air-frying the patties or puff pastry.

Green Peas Stuffing

  • Make sure to use small green peas if using frozen or fresh peas. If you are using harder peas, then you have to cook it in the pan longer.
  • Heat oil in the Heavy bottom pan. Once it is hot, add black mustard seeds & splutter on medium high heat. Add onions & saute further for about 2 minutes with kitchen spatula.
  • Further add all the spices to it including coriander powder, turmeric powder, red chili powder, salt, & garam masala, except Dry mango powder. (If you are using curry powder, then add at this point instead of all the spices). Mix well.
  • Now add the frozen green peas & mix more. Add 3 tbsp water and stir. Cover & cook on medium heat till water is gone & the peas are soft for about 4-5 minutes. Further add dry mango powder & mix it in.
  • Mash it coarsely with the back of the spoon. Stuffing is ready. Now cool it to the room temperature.
  • You can prepare it ahead of time like a day in advance as well & refrigerate. Use as needed. (see the notes)

Puff Pastry Dough Prep with Stuffing - watch video

  • If you are using frozen puff pastry, then make sure to thaw it accordingly and it is ready to be used.
  • Roll the sheet out. Measure and cut it out in 6-8 sqaures using Kitchen scissors. I cut it out in 6 equal squares.
  • Lay one square on working surface. Place 1&1/2 to 2 tbsp filling on one side of the square. Leave some space at the edges to seal.
  • Fold the other half of the square over. Press the edges & corners down with fingers. Use a Fork and seal the edges from all the sides. (see video)
  • Now use either a pizza cutter or a sharp knife to cut off the uneven edges. Don't cut too close the filling.
  • Mark 2 small slits at the top. Repeat the process for all the squares and set aside. Make sure to keep them on parchment paper so that it is easy to pick and work. These are ready to be air-fried.

Air Fry Savory Puffs / Air Fryer Matar Patties

  • Place the Air fryer parchment paper in the basket of the AIR FRYER. Or use a butter paper. It will help avoiding the puffs sticking at the bottom.
  • Place 2-3 at a time depending upon the size of the air fryer. Set the temperature to 390/400*F and timer to 6 minutes. Air fry. Take out. Brush with a little melted butter and air fry for 2-3 minutes more for the golden crispy top.
  • For crispy base - after brushing with butter, remove the parchment paper and air fry further for 2-3 minutes till golden & crispy at top.

Which other recipes can I make with this Matar stuffing?

This Stuffing is great to be used in your- paranthas, samosa, or kachori too. Or make grilled panini style sandwiches with it. I made some grilled sandwiches with it for breakfast today.
You may use some small pieces of potatoes or paneer or carrots to peas to make stuffing too.
