      Prep for the Recipe

      • Gather all the ingredients before starting. Mince the garlic fine and set aside. Chop the Parsley fine and set aside. Break the Fettuccine Noodles into half and set aside. Measure water & cream separately and set aside in bowls/cups to be used as needed.

      Cook on Saute Mode

      • Refer to this post for PASTA 101 in IP.
      • Set inner pot inside the Instant Pot and press the Saute Mode & set on high. Add butter to the inner pot when you see HOT on the screen. And then add finely minced fresh garlic to the butter and saute for 30-40 seconds till garlic gets slightly cooked. Do not brown it. Cancel the saute mode.

      Cook Fettuccine with cream & water in IP

      • Now take the Fettuccine (broken into half) and spread it out evenly in the pan in circular motion (watch the video). Add water, Heavy Cream, Salt & Black Pepper on top of the pasta. Press it down gently with the kitchen spatula
      • Place the lid and set to locking position. Pressure Cook on HIGH for 4 minutes and then follow QPR (quick pressure release).
      • Open the lid carefully. There will still be lot of liquid inside the iner pot. Believe me that is ok. The pasta will absorb all of it as it sits in it for sometime. And this extra liquid is important or else the dish will be very dry in texture. Let the Fettuccine stand as is for 4-5 minutes. Then take the kitchen Tongs and toss the pasta around to make sure it is not stuck with each other and not clumped.
      • Timing of the Pasta NOTE- My fettuccine packet  asked to boil it for 9-11 minutes on gas top. Therefore for al-dente texture, I cooked it for 4 minutes and then followed QPR. If you want softer texture, then cook for 5 minutes and then follow QPR.

      Add remaining ingredients

      • Now take Parmesan cheese and add it in small batches and keep tossing the pasta to let it settle down. Add the cheese only after the pasta sits for 4-5 minutes or it will become too gummy. I have used 1 cup of parmesan. But you can add more as needed. Adjust the salt as needed since every brand of parmesan has different level of saltiness.
      • Now add freshly chopped parsley leaves. Toss all of it together and serve it warm in Pasta Bowls with some GARLIC BREAD on the side.

      How to cook Fettuccine Alfredo Pasta on Gas Top?

      • Boil the pasta as per packet instructions. Drain and Set aside. Heat butter in cooking pan and saute garlic in it for a minute. Then add cream to it (might require more amount). Heat up the cream gently with salt & pepper. Add Pasta. Mix well. Switch off the heat. Add chopped parsley. Serve and eat it warm.

      HOW TO COOK PERFECT PASTA IN INSTANT POT?

      Refer to this post for PASTA 101 in IP.
      Although cooking Pasta in Instant Pot is the easiest thing, one has to keep few things in mind. See below for details for the basic rule of thumb to follow when making any kind of pasta in IP.
      How – Add Pasta to the Instant Pot. Fill the water just till the level of the Pasta. Add Salt & Olive Oil. Place the valve to sealing and once the timer goes off, do a QPR (quick release).
      There are 2 ways that people like their Pasta. It is either AL-DENTE or Slightly more COOKED.
      1. Al-Dente pasta means the pasta with a bite. For this kind, set the timer for half the time that is mentioned on the pasta packet.
      For example, if the pasta instructions ask to boil for 10 minutes, then for Instant Pot, set the timer for 5 minutes on HIGH/MORE on Manual/Pressure Cook Mode. Follow QUICK PRESSURE RELEASE manually.
      2. For a slightly more cooked pasta or a softer texture – Add 1 more minute to the halftime. For example – for 10 minutes cooking time instructions, do 6 minutes and do a QUICK PRESSURE RELEASE.

      TIPS & TRICKS TO MAKE THIS DELICIOUS ALFREDO FETTUCCINE IN INSTANT POT

      1. To cook al dente pasta in instan pot, cook it for 1 minute minus the half time and follow QPR. And for softer paste, cook it for half the time and follow QPR. For example, if the back of the pasta pack says cook for 10-12 minutes, then cook for 6 minus 1 minutes = 5 minutes for al dente pasta. And for softer pasta, cook for 6 minutes and follow QPR.
      2. Always serve this pasta fresh out of instant pot and warm. Since as it sits, it becomes thick and clumpy, eat it fresh when made.

      What other Pasta can I use to make this recipe?

      You can make this recipe with linguine, penne, rotini or any pasta of your choice. Follow the Pasta IP instructions as mentioned above. Always follow Quick Pressure Release.

      How to make lighter Fettuccine Alfredo?

      You can make lighter fettuccine alfredo also by substituting heavy cream with either half & half or milk. It might be more liquidy though.

      My pasta is liquidy. How to thicken it?

      As pasta sits in the liquid, it thickens. Although you can use extra cheese to thicken it.

      What kind of parmesan cheese should I use?

      Use either pre-shredded fine parmesan cheese  or freshly grated parmesan cheese for this reciep. Make sure that you do not add cheese immediately after opening the lid. Let the pasta stand ofr 5 minutes and then add the cheese. Please make sure that you add cheese a little at a time in batches. Keep tossing as you add the cheese to mix it well.

      How to store the leftover pasta?

      Refrigerate the leftover pasta in air tight container. It will stay good for upto a week. But it will become dry and stiff.

      How to re-heat refrigerated Fettuccine Alfredo?

      When refrigerated, this pasta tends to go dry and clump up. To re-heat in microwave, add some milk or water to the pasta and microwave it covered for upto 2-3 minutes. Then seprate with fork and serve. For gas top, heat milk/water in a pan and then add refrigerated pasta to it. Heat it covered till warm. Separate with fork and serve.

      What are the ingredients of Fettuccine Alfredo?

      As I mentioned above, this recipe needs only handful ingredients that are easily available.
      Fettuccine Pasta  - Although this is the ideal pasta to use, but you can use penne, rotini, bow tie, linguini etc. You can also use Gluten-free pasta for this recipe.
      Garlic - Fresh garlic adds so much fresh flavor to it. Use that if you have it. And if you do not have fresh garlic at hand, then use Garlic Powder.
      Parmesan Cheese - It is imperative to the recipe. I would not suggest any substitute for this cheese. Since this cheese adds to the texture and taste of the "ALFREDO" sauce, use it liberally. Although I normally use the fine parmesan cheese that  comes pre-packaged, you can use freshly grated parmesan too.
      Heavy Cream - Now heavy cream is another important ingredient of the recipe. It lends the rich and creamy taste & texture to the recipe. Although if you want, then you can sub it with half & half or milk. But be ready for the lighter texture.
      Salt & Black Pepper- I always recommend to use freshly grounded black pepper. You may use pre-packaged powdered black pepper as well.
      Parsley - Again, fresh Parsley is recommended for the recipe. But feel free to use dry parsley leaves if you want to.
      Butter - Although Butter is used in this recipe, but you can use Olive Oil as well.
