Easy Instant Pot Tomato Bisque Recipe

Easy to make Tomato Bisque is yummy, creamy and very filling. Perfect for busy weeknights or lazy weekends. Great for entertaining guests too.

Ingredients

  • 1 tbsp Butter see notes for more options
  • 1 pound Tomatoes (campari tomatoes recommended) can use tomatoes on the vine or cherry tomatoes
  • 8 ounce Tomato Sauce, canned
  • 1/2 medium size Onion, white or yellow roughly chopped
  • 1 medium size Carrot roughly chopped
  • 2 stalks Celery roughly chopped
  • 4 cloves Garlic roughly chopped
  • 1 tsp Basil leaves, dry or 2 tbsp fresh basil chopped roughly
  • 1/2 tsp Salt or to taste
  • 1/2 tsp Black Pepper powder or to taste
  • 1 tbsp Sugar or sugar substitute to taste
  • 2 cups Vegetable Broth
  • 1/4 cup Heavy Cream or to your liking

Corn Flour Slurry

  • 2 tbsp Corn flour
  • 1 cup Vegetable Broth or Water

Instructions

ALWAYS READ THE COMPLETE RECIPE BEFORE STARTING. GATHER INGREDIENTS. ALSO ALWAYS READ THE NOTES FOR MORE OPTIONS AND TIPS.

  • First of all wash and chop all the vegetables roughly and set aside. Then place the inner pot inside the instant pot and press the SAUTE BUTTON and set it on High. When the screen displays HOT, add the butter and let it melt. Once the butter melts, add chopped onions, garlic, carrots and celery. Saute the aromatics for 3-4 minutes till slightly softened. Now cancel the Saute Mode.
  • Add roughly chopped Campari tomatoes, canned tomato sauce and the basil & salt pepper and sugar. Further add Vegetable Broth. Give it all a good stir. Make sure that you scrape the bottom of the pot well. Put the lid on the instant pot and secure the valve to Sealing. Press the PRESSURE COOK MODE and set it on high for 10 minutes. Once the timer goes off, follow NPR (natural pressure release) method.
  • As the safety valve drops down, open the lid carefully. Take a hand held immersion blender and blend the soup till smooth and thickly pureed. This is a good home style Tomato soup in itself. But if you are looking for restaurant style Tomato Basil Soup then follow the further instructions.
  • Take a bowl and make Corn flour slurry by mixing the corn flour with either vegetable broth or water. Mix it well. Now add this slurry slowly to the blended soup. Mix well. Press the Saute Button again and cook for 3-4 minutes till it thickens. Your Restaurant Style TOMATO BISQUE or TOMATO BASIL SOUP is ready to be served.Adjust the spices and sugar as needed. Add some heavy cream to the soup right before serving and garnish it further with either basil or parsley. Serve it hot topped with some crusty croutons and a bit of butter if you would like.

Stove Top Tomato Bisque Recipe

  • Prep the vegetables as mentioned in instant pot version.
  • Take a heavy bottom sauce pot. Melt butter in it and add the aromatics (onion, garlic, celery and carrots) in it and saute for 5-7 minutes till vegetables are slightly softened. Now add chopped tomatoes, tomato sauce, spices & herbs and vegetable broth. Mix and bring it to a boil. Further lower the flame to simmer. Cover loosely and cook for 15-20 minutes till all the vegetables are very tender to touch.
  • Now take it off the heat. Further blend it into a smooth puree either in a heavy duty blender or use a hand held immersion blender to puree it. Add it back to the pot and pour the prepared corn flour slurry. Mix and cook on medium heat for 4-5 minutes till thick. Soup is ready. Add heavy cream right before serving and garnish with more basil or parsley. Serve it HOT.

Dump & Cook Tomato Bisque Recipe

  • Sometimes when I am running out of time, I make this recipe as a DUMP & COOK TOMATO BISQUE. Just add all the ingredients together in the Instant Pot. Cook on Pressure Cook mode for 12 minutes. Open the lid after NPR and blend till smooth. Add slurry if I have time or serve it as is with some fresh cream and croutons on top. Still a very yummy soup.

How can I personalize Creamy Tomato Soup?

  • Although Campari Tomatoes are reommended, but you can use any kind of fresh tomatoes for this soup.
  • Also you can use canned tomatoes in case you do not want to use fresh tomatoes.
  • Basil is the main herb here. ALthough I used dry basil, you can use fresh basil leaves. Also you can use Italian seasoning if you like that.
  • The best part is that you can make it as thick or as light to your liking. You can skip the corn flour slurry or add more or less of it.
  • Also you can easily control the HEAVY CREAM in the soup. Either use it heavily or light or skip it completely.
  • The amount of salt, pepper or sugar that you use in the recipe can be easily personalized to your liking.
  • Sometimes I add a bit of paprika for that extra kick. SO good.

Can I make Sugar Free Tomato Bisque?

You can easily skip the sugar from the recipe but it will be on more tart side on taste. I would recommend that if you want to substitute the sugar in recipe, then make sure to use sweet tomatoes and sweet carrots. Also you can sub it with sugar substitutes like splenda or monkfruit sweetener.

How to make Vegan Tomato Bisque?

In order to make it a vegan recipe, substitute the heavy cream with coconut cream or cashew cream. Or you can completely skip it. Also use Olive oil in place of butter. And you have a vegan Tomato Bisque.

Is Tomato Bisque a Glutenfree Soup?

Yes it is a glutenfree soup. Make sure that the broth you use has no gluten content in it.

Can I double the Recipe?

Yes! The timing remains the same.

How to store the leftover Tomato Bisque?

You can easily store the leftovers in the refrigerator in an air tigth box.

Can I freeze the Creamy Tomato Basil Soup?

You can easily freeze this soup in freezer friendly container for upto 3 months. In case you want to meal prep and freeze it then do not add the cream to it.

How to re-heat the Creamy Tomato Bisque?

This soup thickens as it sits.
For Refrigerated Soup - You can easily re-heat it either in the microwave. Take a bowl and add the desired amount of soup plus a little water to it. Microwave it on high for 3-4 minutes till it is hot enough to eat. Stir and then add cream and croutons and eat. If you want to re-heat it on gas top then pour the soup in a sauce pan with little water. Stir and bring it to a boil Adjust the seasoning as desired.
For Frozen Soup - If the soup is frizen then thaw it first either in th refrigerator overnight. Or leave it outside on the counter for the whole day. Once it defrosts, then heat as mentioned above.

What are the Ingredients of Tomato Bisque?

As I mentioned earlier, this soup is easy to make because it needs just handful of regular ingredients.
Butter - I love using Butter for my Creamy Tomato Soup Recipe. It adds so much more flavor to the soup. But you can use Olive Oil instead if you want to.
Tomatoes - I like to use Campari Tomatoes for Tomato Bisque. These are the sweetest & most flavorful tomatoes. In case you can't find these, then tomatoes on the vine are a great choice too.
Canned Tomato Sauce - I love using a small can of tomato sauce in the recipe. It adds to the flavors. You can skip it if you want.
Aromatics - White/Yellow Onion, Celery, Carrots & Garlic make the base of any soup. I always keep these handy in my refrigerator to make soup anytime. These vegetables not only add flavors to the bisque, but add good nutrition too.
Spices - I use Basil, Salt & Black Pepper, & Sugar to flavor the Tomato Basil Soup. Clean flavors.
Vegetable Broth - Although I prefer to use vegetable broth in the recipe, sometimes I use water too. It depends upon what is handy at that time.
Corn Starch - Although the soup gets pretty thick after blending, corn starch slurry adds restaurant style thickness to the soup.
Heavy Cream - Now heavy cream is quintessential ingredient for any restaurant style soup. Don't skip it if you want the same flavors and textures.
