Easy Air Fryer Zucchini Pizza Boats Recipe
Zucchini is one of my favorite veggies, and I’m always looking for new ways to use it year-round.
These Pizza Boats are packed with onion, bell pepper, fresh tomatoes, black olives and a host of seasonings. It’s a great weeknight dinner in a flash or awesome party recipe to mix it up every time you make it!
These make a great Vegetarian appetizer or Vegetarian Snack for any occassion.
This recipe is a great way to use up all the zucchini you get in your CSS box.
What are the ingredients of Zucchini Pizza Boats?
This recipe uses only handful of ingredients that are already pantry staple.
- Zucchini – This is the most important ingredient. Make sure that the zucchini you pick for this recipe is FIRM to touch and has no bruises. It should look fresh to you. The stem of the zucchini is tender and green. Also make sure that the zucchini is thick and wide.
- Pasta Sauce – Marinara is my go to pasta sauce. You can use market bought or home made pasta sauce.
- Mozzarella Cheese – Alhtough I prefer mozzarella cheese since it is such a pizza cheese, but you can use any cheese of your choice.
- Black Olives – I love adding Black Olives not only for the taste but it adds a nice contrast. Chop the black olives fine for the recipe.
- Fresh Ingredients – Although I have used mushrooms,yellow bell peppers, and cherry tomatoes, you can use any toppings of your choice or keep it clean.
- Condiments – I have kept it simple and used salt & pepper, red chili flakes and dry basil.
Recipe Kitchen Equipment
- Air Fryer
- Mellon Baller Scoop – You can use a spoon if you do not have one.
- Kitchen Colander
- Chopping Board & Knife
- Measuring Spoons
How to make Zucchini Pizza Boats in Air Fryer?
Prepare Zucchini
Although I chose a large Zucchini and quartered it, you can use 2 medium size zucchini and slice these into halves lengthwise.
Further scoop the middle part out of the zucchini gently using Mellon Baller Scoop or a spoon. Look at the picture. Do not discard the meaty part of the zucchini since you can use it in soups, stews and stir fries. Save it for later.
Lightly oil the hollowed zucchini using either olive oil or an oil spray.
Now fill the hollowed part of the zucchini with Pasta Sauce and top with the Cheese of your choice. Further top it with the toppings of your choice. I used finely chopped yellow bell pepper, mushrooms, black olives & cherry tomatoes.
Sprinkle these Pizza Boats with little salt & pepper, red chili flakes and dry basil.
Air Frying Pizza Boats
Preheat the Air Fryer at 350*F. Place the filled pizza boats inside the air fryer.
Further AIR FRY for about 8-10 till the cheese melts. I used 6 quart Instant Vortex Air fryer and mine were done in 8 minutes.
You want the zucchini to be tender so that it’s pleasant to chew but not so mushy that it falls apart.
Serve these immediately while still hot.
Oven Baked Zucchini Pizza Boats
Prepare the zucchini boats as described above. Preheat the oven at 375*F. Then place these on a baking sheet and bake for 18-20 minutes.
How to store and re heat the pizza boats?
You can store the leftovers in an air tight container in refrigerator.
To re-heat, place these back in air fryer and re-heat at 350*F for 3-4 minutes till warm.
What can I serve with Zucchini Pizza Boats?
You can make it a complete meal by serving either these Shaved Brussels Sprouts Salad or Spinach Strawberry Salad.

Ingredients
- 1 large or 2 medium Zucchini see notes to select the right kind
- 3 tbsp Pasta Sauce
- 3 tbsp Mozzarella Cheese
- 1 small or 2 tbsp Yellow Bell Pepper finely chopped
- 1 small or 2 tbsp Mushroom finely chopped
- 2 tbsp Cherry Tomatoes finely chopped
- 1 tbsp Black Olives finely chopped
- To taste Salt & Black Pepper
- Small pinch Red Chilli flakes
- Small pinch Dry Basil
