To top it, Gin Rickey {Honey Ginger Mint} Cocktail is the easiest cocktail to put together, in absolutely no time. You can not go wrong with this cocktail. Even if you mess up the recipe, there is actually no mess up. I promise. This recipe can be tailored to your own need.
Gin Rickey was originally created with bourbon in Washington, D.C. at Shoomaker’s bar by bartender George A. Williamson in the 1880s, in collaboration with Democratic Lobbyist Colonel Joe Rickey. It became a worldwide sensation when mixed with Gin, a decade later. [Source – wikipedia]
The basic Gin Rickey is made with Gin or bourbon or rye whiskey + half a lime squeezed + mineral water or Club Soda. High ball glass is filled with ice and poured with the mix of gin and lime and then filled with sparkling mineral water or club soda. Easy recipe, right? This basic recipe can be adapted and enhanced to your personal choice and that is exactly what I did.
Once upon time, Gin and Tonic used to be my favorite drink. After a while I realized that Gin and Tonic and Gin Rickey are quite similar. One uses tonic water and the other sparkling water or club soda.

With the approaching long weekend and memorial day, I am sure that many of you will be trying out this refreshing cocktail for the upcoming barbecues and get togethers.
Here is how I made it for 1 serving. For more, just double or triple the recipe. It seriously is no brainer. I like my cocktails light, you can certainly spike it up more to your taste.
Gin Rickey {Honey Ginger Mint} Cocktail
Ingredients
- Gin - 1/2 to 1 tbsp 0.25 to 0.50 ounce
- Mint - 7 to 8 fresh leaves
- Honey - 1 tsp
- Lime Juice - 1 tbsp
- Ginger Juice - 1/2 tsp squeezed from freshly grated ginger
- Club Soda
- Ice cubes
Instructions
- Take a high ball glass of 10-12 ounce capacity.
- Add mint leaves, lime juice, ginger juice and honey at the bottom of the glass.
- Use a stirrer or a spoon and muddle and stir the above ingredients in the glass.
- Fill the glass till 2/3rd, with ice cubes.
- Add gin and stir with the stirrer.
- Fill the rest of the glass with club soda.
- Stir and Sip.

I love this drink, I am a gin fan, it took me a while to acquire a taste for it, first thought it was kind of perfumey but I pretty quickly learned to really like it and a gin tonic was my go to drink whenever I went out. Never had a gin rickey, it does sound wonderful saving this recipe.
