Ingredients

  • 1 pound Baby Potatoes see notes for options
  • 1 tbsp Olive Oil You can use less or spray with oil
  • 1 tsp Kosher Salt or regular salt (to taste)
  • 1 tsp Garlic Powder
  • 1/2 tsp Paprika or use cayenne for some kick

Sour Cream Dip

  • 1/4 cup Sour Cream can use Greek yogurt or thick Yogurt
  • 1 tbsp Lemon Juice
  • 1/2 tsp Salt
  • 1 tbsp Parsley & Mint mix finely chopped ( may use both or either one)

    Preparing the Baby Potatoes

    • Wash the baby potatoes in Kitchen Colander thoroughly under clear running water. Make sure there is no dirt remaining on the surface. Since we are using these with the peels on, this step is important.
    • After washing, pat them dry completely with a kitchen towel. No moisture should remain. Clean the peel of any dark spots or extra tuber growth. Now they are ready to be seasoned and air fried.

    Seasoning the Baby Potatoes

    Air- Frying Baby Potatoes

    • Before you start the whole procedure, pre-heat the Air fryer for about 4-5 minutes at 390*F.
    • Now place the seasoned baby potatoes in the air-fryer basket. And air fry these at 390*F for about 18-20 minutes till you reach the desired crispiness of the potatoes. You have to give it a good shake in between, at about 9-10 minutes mark for even air-frying.
    • I air fried for about 18 minutes. These were crispy from outside and tender from inside.

    Baby Potatoes Sour Cream Dipping Sauce

    • Just mix all the ingredients - sour cream, kosher salt, parsley, mint and Lemon juice. Mix them well to combine. The Dipping Sauce is ready.

    Can I make it in Instant Pot Air-fryer Lid?

    • Yes you can. You will follow the same instructions as air-fryer for IP AIR FRYER LID.

    How can I make it in the Oven?

    • You will bake these in the oven at 400*F for about 18-20 minutes or till they are crispy.

    Can I make it ahead of time?

    Yes you can. Although it is a super simple recipe and can be made at the time of eating, but you can definitely make it ahead of time. And re-heat it later. I would suggest that in this case, you cook these only for 15 minutes and air-fry these further when re-heating for perfect results.

    How do I re-heat it?

    Re-heating these is pretty simple. You can re-heat in the air-fryer for 4-5 minutes at 390*F.

    Can I make double batch?

    Yes you can. Although you have 2 cook these in 2 batches then.

    What to do with the leftovers?

    Refrigerate these. Make double bakes smashed potatoes with the leftovers. Or you can use these in any recipe that uses potatoes.
