Khichdi Cutlets {Rice & Lentils Mash Cutlets}…yes you read it right. I know many of you are making faces but believe me they were gone in an instant. If you are seeing 1-2-3 cutlets in the photos..then that is what was left with me to click with, that too I had to hide these. Such is a plight of a food blogger and her family. LOL! My family sees cutlets and they roam around like bees around honey.

I had to bring these to your notice for 2 reasons –

  1. First is that my mum always made these Khichdi Cutlets {Rice & Lentils Mash Cutlets} with leftover khichdi.
  2. Second reason being – what else can be a better way to use all that leftover Khichdi than making cutlets out of it.

These cutlets are beyond description in taste with all that soft rice mushed with mung beans. These are mixed with herbs and spices and then shallow fried into some great tasting and comforting cutlets.

If you are wondering what is Khuchdi, then khichdi is a mash made with rice and mung beans primarily. I have often heard people disliking khichdi more often than liking it, forget about loving it.

Whenever I make khichdi at home, I have to make an announcement a meal before to make the family mentally prepared..lol… Yes my family is not  a fan of khichdi but I love it.

It is a complete meal and I make it not that often as I should. Khuchdi is light on digestion and sets the upset stomach like no other meal.

When I made cutlets out of leftover khichdi, my little Myraa exclaimed with joy – Mumma, from next time please make cutlets only and not khichdi. That just made my day.

Just to let you know that today I am not going to give an exact recipe to you for this. I will mention the draft of how to execute khichdi into making cutlets. This will make your family really happy. You can use leftover Dhal and Rice also to make these cutlets.

Khichdi Cutlets {Rice & Lentils Mash Cutlets}

Easy Cutlet recipe made from leftover khichdi

Ingredients

  • Khichdi - 2 cups refrigerated and solid
  • Sooji semolina - 1/2 cup or more (dry roasted), enough to bind the khichdi into dough
  • Ginger - 1 tsp grated
  • Green chili - 1 finely minced

Oil & Spices

  • Oil for shaloow frying
  • Garam Masala - 1 tsp
  • Red chili powder - 1/4 tsp or to taste
  • Amchur Dry Mango powder - 1/2 tsp
  • Cumin powder - 1 tsp dry roasted
  • Salt to taste. Be careful since khichdi is already salted.

Instructions

  • Take a big bowl and all the ingredients to it. Bind it into a dough. Use more sooji if required. It depends upon how much watery the khichdi is.
  • Divide the dough into 10-12 equal parts. Shape each part into tear drop shape. Set aside.
  • Heat enough oil in a heavy bottom pan, to cover the base of it.
  • Add 4-5 cutlets at a time and brown them on both the sides on medium heat.
  • Serve them hot with chutney and ketchup.

Notes

You can deep fry these or make them in air fryer.

 

Are you still scratching your head? I promise you that you will make extra khichdi next time to make these cutlets from the leftover.

These can be made gluten free by using dry poha or dry roasted rice flour. These cutlets are vegan as well. I packed these for kids’ lunch boxes and they loved it. These can be made for lunch or dinner as well. You can make it for breakfast and brunch too.

  1. Wow, was going to ask what Khichdi is but I see you answered that. Those cutlets look delicious. There are so many nutritional benefits to eating these, I would love to try making them.

  2. I’m not sure I’ve heard of khichdi Sonal, but I know I’ll love it as I love any form of cutlets. I make fish and vegetarian ones quite often. Is it the same as kicheree? Not sure if that is how it is spelt. Love all the ingredients.
