You must be thinking that I am indulging into chocolate too much these days. Well summer is almost over and autumn is knocking at the door with brisk morning and evening air. That calls for some warm chocolate love.

There is another reason to bake this delicious Chocolate cake today. Ask me why? Today is the end of my very busy and stressful week and the beginning of the weekend. That gives me enough reason to bake a chocolate cake and eat it too.

Sometimes, the calories can knock themselves out. I am telling you the truth that some days need to be stress free and full of bright sun and fun with no worries on mind and a big slice of chocolate cake in the plate with your favorite Latte in the cup.

That was my reason to bake and celebrate. Need a day to just feel the joy of being carefree and nothing on my mind…absolutely nothing.

I had 3 more people who were more eager to share the cake besides me. As soon as I took the cake out of the oven, they were ready with their forks to dig in. I threatened them all not to dare the act. I still had to take the pictures and drizzle with quick ganache.

It was a war zone literally. My Little M was almost in tears while Aanya and Amit didn’t look pleased at all.

Super Moist Easy Eggless Chocolate Cake

Ingredients

  • All purpose flour - 1&1/2 cups
  • Sugar - 1 cup. I used a little less than 1 cup since I like my baked desserts not overly sweet.
  • Cocoa powder used for baking - 3 tbsp
  • Instant Coffee powder - 1 tsp
  • Baking Soda - 1 tsp
  • Salt - 1/2 tsp
  • Vegetable Oil - 6 tbsp
  • Distilled White Vinegar - 1 tbsp please use best quality vinegar for good results
  • Vanilla Extract - 1 tsp
  • Cold refrigerated Water - 1 cup

Ingredients for Chocolate Ganache

  • Heavy Cream - 2 tbsp
  • Chocolate chips - 2 tbsp

Garnish - 1 tbsp finely chopped walnuts or pecans or almond slivers

    Instructions

    • Preheat the oven at 350*F / 180*C. Grease a regular size loaf pan, well with vegetable oil or butter.
    • Take a large mixing bowl and add flour, sugar, cocoa, baking soda, salt and coffee powder to it. Mix all the dry ingredients with a fork or spoon.
    • Make 3 wells in the dry mix. Add vanilla in 1, vinegar in 2nd and vegetable oil in 3rd.
    • Slowly pour cold water in the bowl and start mixing the ingredients. You may use electric beater or a fork to mix the ingredients. Beat /Mix on the low speed until the ingredients are combined.
    • Pour in the greased loaf tin and bake it for 30-35 minutes until a toothpick comes out clean.
    • Let it cool to room temperature in the pan itself. Once cooled, take flip it out gently and let rest on wire rack.
    • Drizzle with Chocolate Ganache and sprinkle some walnuts on top.
    • Slice and enjoy!

    Chocolate Ganache Recipe

    • Take a microwave safe bowl and add heavy cream and chocolate chips to it. Microwave for 30 seconds. Take out and mix well with a fork or spoon.

    Notes

    PLEASE FOLLOW THE RECIPE AS IS. Use good quality vinegar and cold water from the fridge/refrigerator for best results.You can bake this cake in an 8 inch square baking dish also. The addition of coffee is optional. It enhances the flavors of chocolate.

    I actually wanted to call it a Dump Cake but when I found out what dump cake actually is, I refrained naming it. This is such an effortless recipe, just mix all the ingredients, mix and bake. Most important that it requires no fancy ingredient – all purpose flour, sugar, coco powder, instant coffee powder, baking soda, salt, oil, vinegar, water, vanilla. Mix and Bake!

    I am sure many of you are going to bake this cake this weekend, since it is so easy and super delicious.

    1. Hi Sonal, tried this recipe. Immediately after baking felt a bit dry on top & clr not so rich , but next day it was super soft n yummy & dark rich clr. So simple yet tasty bake. Thank you for this super moist eggless chocolate cake.

    2. We made the cake following your recipe, but it tastes a bit sour -probably like the baking soda or the vinegar..also its not as sweet…Any suggestions as to what might have gone wrong?

        This cake never disappoints me! Always comes out perfect! The vinegar needs to be distilled white vinegar. The sugar quantity mentioned is enough. If you want then you can increase it. I hope you did not use the powdered sugar since that needs to be more. And when the recipe says cold water, it has to be refrigerated water and not room temperature. I don’t see any other possibility of a goof up besides these.

      1. I have used Anerican measuring cups. 1 American cup is about 239 gms but it will vary with flour and sugar weight.
        All purpose Flour – 165 gms
        Sugar – 230 gms
        I will recommend to use the measuring cup and not grams here.

    3. Hi! I tried ur recipe today. The cake took almost 45 mins to bake and was not as moist as I expect.. but the flavour was definitely there..

      Also the top is much more harder than the rest of the cake.

      Can u tell me for the dry ingredients do u measure 1cup or half cup ortbsp /tsp as flat or heap?

      1. I am completely surprised since you are the first one who didn’t get the cake right as it is supposed to be. This is may “to go” recipe any given day.
        Anyhow… whenever you read a recipe, the measurements are always level cup, unless mentioned loaded or heaped full. Same goes for tea spoon and table spoon.
        Did you bake it too close to the top of the oven. The cakes are always baked away from the top wire, which broils and toasts the stuff…
        I hope you try it again and get it right.
