Easy Air Fryer Fajita Veggies

Making Fajita Veggies in air fryer is so easy & effortless. It is delicious and is a great meatless meal for every one. Super quick to put together. Video attached.

Equipment

Ingredients

  • 1 large White Onion sliced into 1/2 inch thick slices vertically
  • 1 medium Green Bell Pepper sliced into 1/2 inch thick slices vertically
  • 1 medium Red Bell Pepper sliced into 1/2 inch thick slices vertically
  • 2 large Portobello Mushrooms sliced into 1/2 inch thick slices vertically. see notes for substitute

    Chop the Vegetables

    • First of all wash Onion, Bell Peppers and Portobello Mushrooms and pat them dry. Make sure to clean and wash your mushrooms thoroughly. Here is an article that I wrote on how to clean mushrooms.
      Then slice these vegetables vertically into 1/2 inch thick slices. Do not slice them very thin or they might not hold up their shape and texture. Set them aside in a mixing bowl.

    Prepare the Fajita Marinade

    • Put all the ingredients of Fajita Marinade in a blender and blend till you get a smooth sauce.

    Marinate Vegetables in Fajita Dressing

    • Add the sauce on top of the sliced vegetables. Make sure to coat all the vegetables perfectly in the sauce. If the sauce is more, then save a bit for later. The extra sauce will anyways drip at the bottom of the Air fryer basket.

    Air Frying the Fajita Veggies

    • Pre-heat the air fryer at 390*F for about 5 minutes. Then Spray the air fryer basket with some oil. Transfer the marinated veggies inside the basket. It will be piling on top of each other. Air fry vegetables for about 12-15 minutes till these are slightly crisp. Toss them gently in between after 7-8 minutes for even cooking.
    • You may air fry more for crispier vegetables. Although prolonged air frying might dry out the vegetables. So be careful. 
    • The Air Fryer Fajita Veggies are ready to be served with all the condiments of choice and warm tortillas. Pair with some MARGARITA and you have a party going.

    How to serve the Fajita Vegetables?

    • Fajita platter is an accompaniment of many condiments and sides put together as a platter. 
    • My fav and simplest way of serving a Fajita Platter is -
      Fajita Vegetables, Warm Tortillas, Salsa, Mexican Hot Sauce, Guacamole, Sour Cream, lots of Pickled Jalapenos, some cut salad, & lot of Lime Juice.
    • And sometimes when I have time, I add Mexican Red Rice and Black Beans on the side too. 

    How to make Fajita Veggies in Instant Pot Air Fryer Lid?

    • It is super simple. You will make it in the same way as you make it in the air fryer. 

    How to make it on the gas top?

    • Heat some oil in a deep pan. Add the marinated vegetables and cook on medium heat till done, for about 8-10 minutes.

    How can I make Fajita Veggies in the oven?

    • Coat the vegetables in the marinade and spread out on a greased oven tray. Bake at 400*F for about 20-25 minutes till done. Toss in between.

    Which vegetables to use in fajitas?

    The most common vegetables for fajitas are - Onions, Bell Peppers (Green or any other color) & large Portobello Mushrooms. Mushrooms add the preferred "meaty" texture to the recipe. If you do not find these kind of mushrooms, then go for the regular white button mushrooms. 
    Other vegetables that I have seen being used for fajitas are - Thinly  sliced carrots, broccoli and zucchini. For that  matter, it is your fajita so use whatever vegetables you wan to use.
    But this recipe is for inions, peppers and mushrooms.

    Can't I just season the vegetables instead of using the marinade?

    Good question. The answer is yes you can. But using the seasoning alone might dry out the vegetables while air-frying. The marinade on the other hand keeps the vegetables moist and juicy while air frying these. You will see the difference once you make it.
    The marinade adds smoky flavors and keeps them juicy & moist while air frying these to perfection. The texture comes out beautiful.

    Can I use store bought Fajita Sauce for this recipe?

    Yes you can. If that is what you prefer then go for that. Use about 1/4 to 1/3 cup of store bought sauce for this recipe. 
    In fact, you can use taco sauce or any Mexican sauce of your choice to flavor these. After all recipes are for adaptations.

    How many servings can I make with this recipe?

    This recipe is great for 2-3 people depending upon what else you are accompanying with it. 

    Can I double the recipe?

    Yes. Although you have to cook it in 2 batches.

    Can I make these Air Fryer Tex Mex Veggies in advance?

    Yes. You can air fry these in advance and keep aside.

    How to re-heat the leftovers?

    Just reheat in air fryer at 400*F for few minutes or microwave before serving.

    How can I bulk up the recipe?

    The easiest way to bulk up my Tex Mex vegetables is by adding a can of drained BLACK BEANS. It adds so much more bulk to the serving without hitting you up with the cost.
