Sob! Sob! it ain’t happening in Pittsburgh. But heck to it. I am not going to buckle down under the weather. I will pretend that Spring is happening and bring myself to a better routine of eating better and living healthier. My Stepping is already looking good.
Spring brings not only bright flowers but colorful vegetables as well. It is a perfect time to enjoy some bright crunchy and crisp vegetables in pure form. So what can be better than the SALADS? As we gear up for summer You will see a series of bright, delicious, nutritious and easy salads from me in the month of April.

Chopped Asian Salad with Light Peanut Dressing
Ingredients
CHOPPED ASIAN SALAD
- 2 Cups Lettuce Leaves chopped roughly into 1 inch squares
- 2 Cups Red Cabbage chopped roughly into 1 inch squares
- 1 Cup Green Cabbage Shredded
- 1/2 Cup Broccoli cut into small florets
- 1 Large Carrots Shredded
- 1/4 Cup Cilantro Leaves
- 3 tbsp Peanuts dry roasted
LIGHT PEANUT DRESSING
- 3 Tablespoon Peanut Butter
- 1 Large piece Ginger
- 1 Tablespoon Soy Sauce Use Tamari sauce for gluten free version
- 3 Tablespoon White Distilled Vinegar
- 1 Teaspoon Hot Sauce
- 3 Tablespoon Water
- 1 Tablespoon Lime Juice or Lemon Juice
- 1 Tablespoon Honey
Instructions
Prepping Salad
- Take a Large Mixing bowl. Add chopped lettuce + red cabbage, shredded green cabbage + grated carrot, Broccoli and Cilantro leaves. Use Salad Tongs and give it a good toss. Set Aside.
Light Peanut Dressing
- Take a high watt blender like Nutri bullet or Magic bullet. Add all the ingredients as mentioned under the Peanut Dressing. Blend will they all turn into a smooth sauce or dressing.
Assembling the Chopped Asian Salad with Light Peanut Dressing
- Add the dressing to the Prepped Salad. Add roasted Peanuts. Toss the whole thing. You can eat it immediately after mixing it or let it sit for 10 minutes for the dressing to marinate the salad well.
