The Indian version of Rice Pudding is called CHAWAL ki KHEER, where chawal is Rice and Kheer is Dessert with thick consistency.
My mother made the best kheer ever. And she made it for all the main festivals and sometimes for no reason. I remember her cooking the kheer on low/sim heat for hours for that perfect texture and color.
Although traditional method still uses the long hours of slow cooking, but honestly who has the time these days. Not me. And I bet you neither.

What is Chawal ki Kheer?
It is a delicate pudding made with rice and milk. Sugar is added at the end. This is the basic recipe.
Thereafter, you can enhance the kheer with cardamom, and saffron. I love adding these 2 condiments to my kheer.
Last but not the least, pudding can be topped with nuts of your choice. I normally add chopped almonds and pistachio. You can add cashews and raisins too.
Tips to remember when making DESSERT IN INSTANT POT
Few tips to make dessert successfully in Instant Pot –

- Always make sure to clean the inner pot, and the lid thoroughly with warm soap water. A clean inner pot will avoid any sticking or BURN NOTICE while cooking.
- I always keep few rubber rings handy to cook my meals and desserts in Instant Pot. One I use for making all the savory dishes. Then another one I use strictly for desserts only. The blue one is my dessert ring.
- Also I store my rubber rings in freezer. This keeps them tight. And when in use, it brigs the pressure in the IP faster. It is my tried and tested tip.
Ingredients used
Basmati Rice – Basmati Rice comes handy for making all your Indian Rice dishes too, like pilaf, biryani etc. You can use short grain or long grain rice as well. Check out our Pulao/Pilaf Recipe Collection.
Milk – Use plant based milk for vegan option. I like unsweetened almond milk in this recipe a lot.
Sugar – You can add Splenda or any other sugar free sweetener to make it low on sugar.
Cardamoms – Peel the cardamom skin and use the seeds/pods inside.
Saffron – You can skip it if you want to.

Instant Pot Chawal ki Kheer is a super delicious dessert made with rice and milk. It is laced with delicate flavors of cardamom, and saffron. Garnished with almonds and pistachio, it is a delightful Rice Pudding or Rice Porridge. Do read the whole post above for many suggestions and tips. Gather all your ingredients. Change the inner rubber ring of the lid to the one that you use for desserts. Always keep 2 rings handy. Use 1 for savory and another 1 for desserts. First of all place the clean and dry inner pot inside the Instant Pot. Plug it in. Now add Milk and washed basmati rice to the inner pot. Give it a good stir. Please make sure that no rice grain gets stuck to the bottom. Therefore good stirring is necessary. Close it with the lid and set the valve to SEALING. Press PORRIDGE BUTTON. It is auto set for 20 minutes and at Normal Mode & High Pressure. Please stick to that setting. Don't change it. Once the timer goes off, then follow NPR (natural pressure release). As the safety pin drops, open the lid carefully. You might see rice and milk slightly separated but it is ok. It might be slightly browned at the bottom as well. And that is ok too. Take a kitchen spatula and give it a good stir, mashing it slightly. The Rice Pudding will come together thick and creamy. Further add sugar to the pudding/kheer. Give it a good stir. Note - We usually like the pudding less sweet so 1/3 cup of sugar was just enough for our family. But if you like your kheer with good amount of sweetness, then use 1/2 cup of sugar. Now add Coarsely crushed cardamom powder. Also add soaked saffron with milk. Stir again. Chawl ki Kheer or your Rice Pudidng is ready. Garnish it with chopped nuts and serve. Yes you can.
