Another day with pancakes in my house. I read a good recipe on Food Network, an year ago and that’s my base now. Such a good recipe which I did simplified and adapted. Made some good pancakes on the demand of the kids today for the breakfast.
Yields : 8 to 10 medium size pancakes.
Kitchen Equipments Required : 2 bowls, a fork, a whisk, a microwave safe bowl, a hard anodized or non stick pan, a spatula.
1&1/2 cups flour : I used 1 cup all purpose flour and 1/2 cup whole wheat flour
3 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1&1/4 cup milk
2 large eggs
3 tablespoons butter, melted.
Oil spray or little butter if required for cooking.
- In a large bowl, combine flours, sugar, baking powder, and salt.
In a small bowl, combine milk, eggs, 3 tablespoons melted butter and add to flour mixture, whisking until smooth.
Heat the non stick or hard anodized pan on medium flame with a light oil spray.
Ladle about 1/4-cup batter for each pancake onto hot griddle. Cook pancakes for 2 to 3 minutes on medium flame, or until tops are covered with bubbles and edges look cooked. Turn and cook the other side for about 2 minutes.
Serve warm with maple syrup OR honey OR chocolate sauce!
Here is how I made quick chocolate sauce : Take a microwave safe bowl and heat 1/2 cup of heavy cream in the microwave for about 1 minute. Take it out. Add 1/3 cups chocolate chips of your choice to the hot cream. Whisk them together with a whisk or a fork till chocolate chips are melted well and incorporated as a good liquids sauce. You may store it in fridge for other uses too :).
