Although Brussels Sprout does not have a very good reputation, but my children love the vegetable. We often make this Roasted Brussel Sprout with lemon & parm and Steamed Brussels Sprouts with Cranberries & Lemon as a side for our dinner. These tiny cabbages are a regular on our monthly menu. This Shaved Brussel Sprout Salad is a great way to add a fresh element to any dinner table.
If you ask me, then this Brussels Sprout Salad reminds me of the crispness of the coleslaw. Every single bite makes you feel so happy and full with all the flavors and textures bursting. The best part is that you can make and eat this salad all year round. It sure is a Healthy Salad.
Why I love this Shaved Brussel Sprout Salad Recipe

What are the ingredients of Brussel Sprout Salad?
Although the main recipe requires handful ingredients, the lemon mustard vinaigrette needs some ingredients. But all of these ingredients are already pantry staple, so no fancy shopping. In case you do not want to make the dressing at home, use the market bought one.
Brussels Sprout – These tiny buds belong to cabbage family and sharper in taste, sometimes a bit bitter. If you do not want to use this vegetable, then you can use shredded cabbage too.
Pomegranate Seeds – The sweet and sometimes tart pom arils add a great texture and beautiful burst of flavirs to this salad. You can also use blueberries if you like.
Walnuts – Walnuts add texture and taste both to the salad. Also, these nuts add good nutrition as well. You may use pecans instead. In fact you can use any other nuts or seeds that you want like sunflower seeds or pumpknin seeds.
Raisins – I love using raisins in my salads for that perfect balance of flavors. the sweet and tart raisins balance the slight bitterness of the brussels sprouts. You can use craisins instead of raisins.
Feta Cheese – I love using feta in my salads. It is so creamy and mixes well with it. If you do not like feta then you can use goat cheese or any other cheese that you like. Or skip it completely to keep it vegan.
Pistachio – Now this is totally optional. I normally would crush the pistachios in coarse powder and sprinkle on top for more texture. You may skip it completely.
Cooked Quinoa – Although optional, it is a great addition and make the salad very filling.
Lemon Mustard Vinaigrette – I use home made lemon mustard vinaigrette which is super easy to make with just handful of pantry staples. But you can use market bought vinaigrette as well. If you plan to make it at home (which I totally recommend), then here are the ingredients for homemade salad dressing.
Dijon mustard, Lemon juice, Apple cider vinegar, Honey, Garlic, Dry Parsley, Extra Virgin Olive Oil, Salt & Black Pepper.

How to prep Brussels Sprouts for the Salad?
First and foremost, wash the Brussel sprouts well in cold running water. Then remove the specked and/or limped top layer of Brussel sprouts. Further remove the thick stem part of the sprouts. Pat them dry with a kitchen paper towel.
How to shave brussel sprouts?
There are 3 ways to shave Brussels sprouts. Once done, set these aside in a salad bowl.
- Mandoline Slicer – If you have a good sharp Mandoline slicer, then use that to shred or shave the sprouts.
- Sharp Knife – Now this gadget is my best friend. I use my simple kitchen knife to shave or slice the brussels sprout very thin for the salad. The thinner the shreds, the more flavors these will absorb.
- Food processor – Yes you can use your food processor and shred them. These won’t look like shavings but would be good to use.
How to make Lemon Mustard Vinaigrette at home?
It is the simplest salad dressing to make at home.
Take a small blender jar and all the ingredients to it. Then blend it till it is all smooth. Now that is one way of making it at home. And I love it since it gives a smooth vinaigrette.
But if you want, then you can also put all the ingredients in a mason jar. Close the lid and give it a good shake till all the ingredients are mixed well.

Take salad tongs and mix the salad well. Refrigerate it for few hours before serving for best results. If it sits for a bit, it will absorb the flavors well and taste amazing.
How to store the leftover Salad?
Since this is a salad made of hardy brussel sprouts, it can sit very well in refrigerator for up till 2 days. Refrigerate the leftovers in an air tight container.
How can I bulk up this salad?
If you want, then you can add cooked quinoa, bulgar or the grain of your choice. Make a Bowl of your choice with it and make it more wholesome.

Yes absolutely you can double or triple the recipe.

- Further add 4 -5 tbsp Lemon Mustard Vinaigrette on top. Take salad tongs and mix the salad well. Add more dressing if needed. Or put it on the side of the salad for folks to help themselves if they want more.
- Let it sit for 15-20 minutes before serving for best results. If it sits for a bit, it will absorb the flavors well and taste amazing.
How to cook Quinoa in Instant Pot for this recipe?
- I normally cook a cup of quinoa as a meal prep over the weekend and use it in my salads and meal bowls as needed. If you want to make this meal more wholesome and filling, then add cooked quinoa to it. Here is how you cook Quinoa in instant pot.
- Take a cup of dry quinoa and place it in a sieve. Wash it under room temp tap water for 30-40 seconds. Further place the quinoa in the inner pot of instant pot. Add 1 cup of water to 1 cup dry quinoa. Close the lid. Pressure cook on HIGH for 3 minutes. Then follow NPR (natural pressure release method). Once the safety valve drops, then open the lid. Carefully fork the cooked quinoa. Bring it to the room temperature and store in air tight container in the refrigerator. Use as needed. I normally add 1/4 cup cooked quinoa to my salad bowls.
