Whenever we would go visit Grandma in the winter, she would always have a stock of oranges to feed us unlimited.

Sunny Cold days (oxymoron right?) and juicy sweet oranges were the match made in heaven. 

If given a choice, I would rather eat the whole orange than drink a glass of orange juice. Another favorite form that I devoured the oranges was – Bitter Sweet Orange Marmalade.

I could finish the whole jar of the marmalade and look for more. There was something so satisfying about the Marmalade that I could never have enough.

How to make Easy Orange Marmalade in Instant Pot?

Traditionally, making Orange Marmalade is a work of love and labor. It takes good 8-10 hours to make a traditional Marmalade. Thanks to Instant Pot, that now Orange Marmalade is done under an hour and still tastes so authentic. :O

Since the Marmalade is a whole fruit preserve including the skin, it is different from Jam or Jelly.

Choosing the Right Oranges

Traditionally, Quince was used to making Marmalade. A popular kind of orange used for the fruit preserve is SEVILLE.

Seville oranges are high in natural pectin and give perfect taste with that a tad bit of bitterness, exclusive to the marmalade.

I used whatever oranges were handy. But making sure that these were thin skinned so that my marmalade was not very bitter.

Washing the Oranges

Since we use the fruit with its skin, this is an important step. Either you are using the organic or regular kind, washing it right is a must.

First, I cleaned the oranges off any stickers or stems. 

Then I filled a large pot with about 1 gallon of water and added about 2-3 tbsp Vinegar to it. Dunked the oranges to the water and let stand for 10 minutes. Drain the water and the oranges are ready to be used.

Preparing the Oranges for Marmalade

In order to obtain that perfect spreadable Marmalade, it is important to prepare the Oranges right. 

You may use a Sharp Knife (on sale right now) or a Mandoline to prepare the oranges.

You must cut or grate the oranges with their skin very thin for the best result. Also, you may make the cuts long or short. I kept them medium length.

Preparing Oranges in Instant Pot for the Marmalade

Add thinly sliced oranges with their skin and juice to the Inner Pot of the Instant Pot. Place the inner pot inside the IP. Plug it in. Add the water. Close the lid and set the valve on SEALING. Press the Manual/Pressure Cook Mode and set it on HIGH for 10 minutes. After the timer goes off, follow NPR (natural release).

Instant Pot Marmalade

Since the basic prep is done till the above step, now we set on to make the Marmalade.

Add Granulated Sugar to the Oranges now. 

Press the Saute Mode and set it on for 25 minutes on NORMAL MODE. Stir the sugar well in the Cooked Oranges. And cook for about 22-23 minutes till the Orange Marmalade is set to its consistency.

I went by the timing since I didn’t have the candy thermometer and it set well. If you have a Candy Thermometer, then cook till the temperature rises to 223-225 degrees F.

VERY IMPORTANT – It is very important to keep stirring the marmalade while it is cooking. Since there is sugar in it, it will start caramelizing and burning at the bottom. So keep stirring the pot often.

How to make sure that ORANGE MARMALADE is ready?

It is a simple test. Place a plate in the freezer before you start the process. When the marmalade is done, take the plate out. Place a teaspoon-ful of marmalade at the back of the chilled plate. If the marmalade is done, it will be gel like and move just slightly. And If the marmalade is runny, then cook for some more time.

Quantity of Marmalade made from this recipe

I have made a small batch of the marmalade and can easily fit in 2 small mason jars of 6 ounces each. You will get about 12-15 ounce of Orange Marmalade from this recipe.

How to store Instant Pot Orange Marmalade?

Before you start the process, boil 2 of the 6 ounces clean jar with lids or 1 large jar in water for about 10-15 minutes. Take them out and dry with a clean paper towel. Once the Orange Marmalade is cooled for about 15-20 minutes, fill up the jars with it. Store in refrigerator. 

Since there is a chance that you will indulge liberally on it, it would finish soon.

Suggestions to Use Orange Marmalade in Recipes

  • The marmalade can be used as a spread. Toast your favorite slice of bread, apply some butter and then spread a generous layer of ORANGE MARMALADE on top. Bliss.
  • You can dilute the Marmalade a little and use as a dipping sauce on your cheese board.
  • Bake the Orange Marmalade with your Brie and indulge.
  • Use it as a glaze for your cakes and muffins or protein.
  • Enhance this marmalade with either CInnamon, or Cayenne Pepper, or Lemon Essential Oil. You can totally personalize it. My personal favorite is adding a bit of lemon juice and cayenne pepper to it for that perfect balance of sweet, bitter, sour, acidic, and spicy. Yumm.
  • Use it as a base of your Asian Stir fry Orange sauce and add tofu or vegetarian meatballs of your choice.

  1. I love 3 fruit marmalade. It is made with oranges grapefruit and limes. Would it be possible to use you recipe to use your recipe for this?

  2. The flavour of the recipe is fabulous! I only sauteed the mixture with the sugar for 15 minutes and it is too thick. I will make it again, but reduce the saute time to 10 minutes (all ingredients were weighed and measured, but different types of oranges have different juice volume)

    I just made the marmalade but came out thick and bitter. I wonder if the four medium oranges equal one pound. I used two oranges that equal one pound and they are medium size from my tree.

    1. If the oranges had thick peel, they are not fit for marmalade. Only thin skin oranges to be used. I can’t say about the weight. They needed to be rigged before adding. You can add some liquid or orange juice n dilute and combine again for fixing the thickness.

  4. My small oranges are quite juicy. Does the juice count as water? because my first batch came out too watery. had about 1 cup of the juice + 1 cup water for 3 lbs oranges. May-be it will set up? Temp did get to 223 F during the salute step.

  5. May I freeze. I used 5 small oranges and it made double the amount of the recipe. It is delicious. I did squeeze the juice of two small oranges over the thinly sliced and diced oranges before putting on saute’ mode.

      Yes water amount is correct. I think you overcooked it hence it is so thick. Dilute it with some water and warm it. Or use it as a marinade or basting spread for your protein.

      Thank you for trying. Yes that’s correct. It’s a tried tested and loved by many recipe. Never heard any complain. Please make sure that the inner pot is clean and stir the mix well before closing the lid.

    1. Hey, try adding Vanilla Extract to a batch, it’s amazing! Reminiscent of orange cream bars from our childhood, it really does add something special! Try one to two tsp for the smaller batch, I make 4 x that much and add up to two tbsp, of my pure homemade Madagascar Vanilla. Incredible!

    1. Yes, very easy to process in a hot water bath or pressure canner. I have a dozen jars canned right now! Great gifts too! Love to make sweet n sour meatballs with this marmalade too!

  7. The directions are confusing to me. Do you peel the orange with a potato peeler (perhaps?), and then cut the rest of the orange into pieces and everything goes in the instant pot (seeds and all)??? I’m confused.

  8. Fantastic! I did what you said to the letter, and it worked. I used leftover clementines I had! I weighed them and lut equal amount of sugar which happened to be the same as you said! I thought that was awesome. I sat on my stool in the kitchen listening to podcast whilecI stirred…time went fast! Its a bit too bitter at the moment, not uneadable but just bit bitter, any ideas apart from lemon oil to help sweeten it up a bit? Can’t believe we can make this in tge instant pot! I got it off hubby for Christmas…isn’t it AMAZING this pot?! I’ve used it nearly everyday since I got it! Anyway thanks sgain for your recipe, also my sister can have this as she’s vegan!

    1. Hello Teresa – I am not sure if you can do that or not. I have always been making marmalade this way and comes out great every single time. I wish I had a better answer. If it can be of assurance, people have tried this recipe and Cale back with good results.

  10. Can honey be substituted for the sugar in this recipe? The usual adjustment is 1/2 cup of honey equals 1 cup of sugar.

    1. I wouldn’t recommend for 2 reasons –
      1. I have never made a marmalade using honey.
      2. Honey looses its properties upon being heated.
      Although I think if you just add honey and don’t cook it further…can be an option. Though I can’t support it with my testing as I have never done it.

    1. I followed your instructions to the letter, with exception of the sauté time as it only took 15 min to get it to the 223-225 temp. You test on the back of the plate worked perfect. Ii did 2 I’ll initially in the pressure cook stage. Then divided in half. Including half of the juice rendered. (1/2 cup for each). In the first half I added a tsp of vanilla… wow. How good is this. For the second batch I cleaned and removed seeds from 1 Habanero Pepper and grated it in the second batch My husband and son not huge fans of orange marmalade, absolutely love it. I had never made any preserves previously, because although I love to cook and bake, being in the kitchen for 8 hours is NOT my thing. And since I got my instapot 2 years ago, I love the simplicity of one pot dishes. (Best just because it was Amazon Prime day present. ever.

      Thank you so much for such a wonderful present to occupy my time with during COVID-19. I am actually enjoying learning the things I never had tome for in the past.
