Air Fryer Eggplants in Asian Sauce

Air Fried Eggplants tossed in Asian Sauce are so easy to make and delicious. They pair well with rice, fried rice or any type of noodles. Great recipe for a busy weeknight meal.

Equipment

  • Measuring Spoons, Measuring Cups, Stirring Spoon,

Ingredients

  • 10 Baby Eggplants washed and slit vertically into 4s
  • 2-3 sprays of Cooking Oil or 1/2 tbsp Cooking Oil

Asian Sauce

  • 1 tbsp Soy Sauce Use Tamari sauce for gluten free option
  • 1 tbsp Lemon Juice
  • 1 tsp Ginger grated
  • 1 tsp Garlic minced
  • 2 tsp Honey or more (to taste)
  • 2 tsp Sriracha or less (to taste)
  • 1 tbsp Corn Starch dissolved in 2tbsp cold water to thicken the sauce (opttional)

Instructions

Read the complete recipe before starting. Gather all the ingredients and start prepping.

  • Firstly wash the Eggplants and then pat them dry with a paper towel. Now slit them into equal 4s (vertically).
  • Further add these to the Mixing Bowl and spray lightly with Oil or Oil Spray.
  • Now add these to the Air fryer basket in a single layer.
  • Now air fry these at 390*F/180*C for about 8-10 minutes till the eggplants get slightly crispy on the top and soft from inside. Shake the basket in between for 1-2 times. Air fryer Eggplants are ready to be coated in Asian sauce.

Asian Sauce Recipe

  • For Asian Ginger Sauce, mix Ginger, Honey, Soy Sauce, Sriracha & lime juice together with a Small Whisk. It is a great dipping sauce that is "no cook sauce". And it is perfect to pour over a dish too. Now this is a pouring sauce.
  • If you want more sticky thick sauce then take a small sauce pan and add all the sauce ingredients to it along with the CORN STARCH SLURRY. Bring it to a boil and then simmer for few minutes till it thickens.
  • Note - Prepare Corn starch slurry by mixing 1 tbsp Corn Starch with 2 tbsp cold water. Mix till it incorporates well. And then use as directed. Also you can adjust the sweetness or heat of the recipe to your taste.
  • Now toss the AIR FRIED EGGPLANTS in Asian Sauce and serve warm.

Can I make these ahead of time?

I wouldn't recommend that. It is a simple and quick recipe. Keep the sauce ready. And air-fry just before eating.

Can I double the batch?

Yes you can. But you might have to do it in 2 batches. Also, make a little more of the sauce.

Is it possible to make this Eggplant Recipe in the oven?

Yes you can roast these in the oven at the same temperature. Timing may increase. Broil it for a minute towards the end for more charred flavors.

Can I make it in Instant Pot Air fryer lid?

Yes you can. Cook them in the air fryer lid at the same temperature. Although it will get done faster in the air fryer lid.

Can I roast these in Mealthy Crisp Lid?

Yes you can. Cook them in the Mealthy Crisp lid at the same temperature. Although it will get done faster in the Crisp lid.

Can I pan roast these?

These can be easily roasted in a pan on high heat like how you make stir fry. Heat a little oil in a pan. Add the Eggplants and stir fry at high heat for few minutes. Stir a few times.
