Instant Pot Massaman Curry – Vegan Thai Curry

Every time we go to a Thai Restaurant, our order from the menu is fixed. Red Thai Curry, Noodles, Basil Stir-fry. But I was getting bored with the same old menu.

Therefore on our last visit  to our favorite Thai restaurant, I decided to order Massaman Curry. And requested them to make it vegetarian with Tofu. They were very accomodating and got us the vegetarian version.

To my pleasant surprise, I was delighted to taste it. It was bursting with Thai flavors and hints of Indian spices as well. Needless to say that we finished it all. It was a good decision to order something new. 

Since it Is a super simple recipe, I have been making it at home with success.

What is Masaman Curry?

This curry is less known curry from the Thai Cuisine. Red Thai Curry and Green Thai Curry are most popular curries from the cuisine.

It is a rich and relatively mild curry. Cinnamon, Cardamom, Cloves, Cumin, Bay leaves, Nutmeg are combined with local flavors like dry red chili, lemongrass, galangal, shallots, garlic, shrimp paste etc to make Curry Paste.

This curry has Muslim roots. Massaman is an adaptation of Mussulman (Muslim). Read more about it here.

Ingredients of the Curry

Since it is such a simple recipe, even the ingredients are few and easily available.

Masaman Curry Paste – This is a vegan Thai Masaman Curry Paste.

Coconut Milk

Soy Sauce

Sugar

Extra Firm Tofu

Fresh Produce – Potato, White Onion, Broccoli, Green Beans, Carrots, Bell Peppers, Green Onions/Scallions and any vegetable of your choice.

Garnish – Red Chili Flakes, Lime, Roasted Peanuts

Note – Since Potato is an important ingredient of this curry, do not skip it. If you are allergic to Potatoes, then you can use sweet potatoes instead.

How to make this Asian Curry Vegan?

The brand that I use for my Thai Curries is Vegan. Maesri is a reliable brand. You can buy it from your local Asian Grocery store or order online from amazon. There is no shrimp paste added to it. All the ingredients are vegan.

Is Masaman Curry Glutenfree?

To make it Glutenfree, substitute Soy sauce with Tamari Sauce. 

Is it Dairy-free?

Since this is a coconut curry, it is completely dairy-free.

Can I make it in advance?

You can easily make this recipe in advance in Instant Pot. It comes handy as a part of meal prep when you make it in advance.

How to Store this curry?

You can refrigerate it for up to week. Consume it in a week for the best flavors. You can easily heat it in the instant pot, microwave or gas top.

Gas Top Masaman Curry

Although this is an instant pot recipe, you can easily make it on the gas top. I have mentioned the steps in the RECIPE CARD below.

How to serve this Curry?

Ideally, Jasmine Rice is served with Thai Curries. But you can serve it with the rice of your choice, or quinoa or Noodles. Or make it little soupy and drink as a soup or stew.

Instant Pot Massaman Curry Vegan Recipe

how to make vegan massaman curry?

Massaman Curry is super simple and easy to make. It is so delicious that you will be hooked. Made in Instant Pot, it is a must try. Instructional Video Attached.

Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

  • Massaman Curry Paste - 4 ounce can Maesri Brand
  • Coconut Milk - 13.5 fl ounce can
  • Dark Soy Sauce - 1 tbsp
  • Sugar - 1/2 tbsp (You can use any sweetener)
  • Water - 1/2 cup

Fresh Produce

  • White Onion - 1 medium, chopped into medium size cubes (not too small)
  • Potato - 1 medium, chopped into medium size cubes (not too small)
  • Mixed Vegetables (fresh or frozen) - 2 to 3 cups inlcuding broccoli, green beans, carrots, bell peppers, or of your choice.
  • Extra Firm Tofu - 1 cup cut into medium size cubes
  • Green Onions/SScallions - 2 stalks, greens and whites separated and sliced

Garnish

  • Roasted Peanuts, Lime slices, Red chili flakes

Gather all your ingredients.

Preparing the Massaman Curry on PRESSURE COOK MODE

Place the inner pot inside Instant Pot or your electric pressure cooker. Plug it in. Add Coconut milk + Massaman Curry Paste to the inner pot. Add 1/2 cup water. Mix well with a kitchen spatula.

Add soy sauce, sugar, cubed potatoes & cubed onions to the curry mix. Give it a good stir. Place the lid and put the vent on SEALING. Press PRESSURE COOK MODE, set it on NORMAL for 5 minutes.

Once the timer goes off, follow QPR (quick pressure release).

Cooking on SAUTE MODE

Now open the lid and add the tofu + vegetables of your choice + white part of the sliced scallions to it. I have used broccoli, bell peppers, green beans, & carrots. You can also use baby corn, water chestnuts, zucchini etc.

Place another lid on top. Press SAUTE MODE and set it on HIGH for 5 minutes.

Masaman Curry is ready. I squeeze a generous amount of lime juice at the end to bring all the flavors together.

GAS TOP MASSAMAN CURRY INSTRUCTIONS

Take a heavy bottom pan and add curry paste, coconut milk, water, suagr, and soy sauce to it. Stir with a kitchen spatula. Add onions, and potatoes. Bring to a boil and then cook on medium heat till potatoes are soft. Or to cut down the time, you can use boiled potatoes as well. Make sure that potatoes are not too soft. You may have to use little more water for gas top recipe.

Once the potatoes are soft, add other vegetables and tofu. Cook on medium heat till vegetables are al-dente, which means cooked with a crunchy bite.

Top with peanuts, lime juice, green scallions & red chili flakes.

The curry is ready.

Serving Suggestion

Jasmine Rice goes best with Masaaman Curry. But you can eat it with brown rice, or quinoa or noodles. It is your Curry Bowl, so create your own.

I like to top mine with sliced green scallions, roasted peanuts, red chilinflakes, and lime juice.

  1. I have tried many times to prepare massaman in a wok with varied success; this recipe using the pressure cooker changed that. Super easy, no mess, and amazing flavours! I added some oyster mushrooms at the simmer stage as I had some left over, a great alternative for meat.
    Will definitely make this again!
