Easy Spinach Strawberry Salad Recipe

Make this delicious and easy Spinach and Strawberry Salad with home made balsamic vinaigrette. It is so quick to make and makes a great side to any meal. It is perfect as a light lunch as well.

Ingredients

  • 10 ounce Spinach greens (I prefer Baby Spinach) check notes for options
  • 15 Strawberries
  • 4 tbsp Blueberries optional
  • 2 tbsp Pecans or Walnuts
  • 2 tbsp Almonds sliced
  • 1/4 cup Feta Cheese check notes for options
  • 1/4 cup Honey Balsamic Vinaigrette Check notes for home made recipe

Instructions

    Prep the inngredients

    • GREENS - Although Greens come washed, but give them a light rinse. And if you are using unwashed greens then make sure thsat you wash these thoroughly.
    • STRAWBERRIES - Wash the strawberries. Pat them dry. Remove the top and hull the white part out from the top. Now quarter these.
    • NUTS - Chop the pecans or walnuts roughly. Slice the almonds if you are not using the pre sliced alminds. You can keep the almonds slightly chunky too.
    • FETA - crumble the feta if you are using from the block.

    Assemble Spinach Strawberry Salad

    • Take a large Salad Bowl. Add washed Spinach, quartered strawberries, washed blueberries, roughly chopped pecans, almond slivers, and crumbled feta cheese. If you plan to add quinoa or any other grain to this salad to make it more wholesome, then add that now.
    • Further add 4 -5 tbsp Honey Balsamic Vinaigrette on top. Take salad tongs and mix the salad well. Add more dressing if needed. Or put it on the side of the salad for folks to help themselves if they want more. If you plan to add chia seeds, then add those in the end.
    • Let it sit for 15-20 minutes before serving for best results. If it sits for a bit, it will absorb the flavors well and taste amazing.

    How to cook Quinoa in Instant Pot for this recipe?

    • I normally cook a cup of quinoa as a meal prep over the weekend and use it in my salads and meal bowls as needed. If you want to make this meal more wholesome and filling, then add cooked quinoa to it. Here is how you cook Quinoa in instant pot.
    • Take a cup of dry quinoa and place it in a sieve. Wash it under room temp tap water for 30-40 seconds. Further place the quinoa in the inner pot of instant pot. Add 1 cup of water to 1 cup dry quinoa. Close the lid. Pressure cook on HIGH for 3 minutes. Then follow NPR (natural pressure release method). Once the safety valve drops, then open the lid. Carefully fork the cooked quinoa. Bring it to the room temperature and store in air tight container in the refrigerator. Use as needed. I normally add 1/4 cup cooked quinoa to my salad bowls.

    How to make Honey Balsamic Vinaigrette at home?

    Ingredients (yields 1 cup)
    1/4 cup Balsamic Vinegar
    1/2 cup Extra Virgin Olive Oil
    3 tbsp Honey
    2 tbsp Dijon Mustard
    2 cloves Garlic, chopped
    1 tsp Thyme, dry
    1 tsp Salt
    1/2 tsp Black Pepper powder
    Method
    Take a small blender jar and all the ingredients to it. Then blend it till it is all smooth. Now that is one way of making it at home. And I love it since it gives a smooth vinaigrette.
    But if you want, then you can also put all the ingredients in a mason jar. Close the lid and give it a good shake till all the ingredients are mixed well.

    What to serve with this Strawberry Salad?

    As the recipe is written, this salad is perfect for a bright side or starter, but here are a few ideas to make it a main dish-
    Soups - I love making Cafe style combos where the food comes in Pick 2 of your choice. So I often pair them with soups to make a meal. Some of my favorite soups are - Barley Soup, Minestrone Soup, Tomato Bisque and more.
    Dishes to pair it with - I love serving this salad with some AIR FRYER APPETIZERS to make it a complete meal. Some examples are - Puff Pastry Pizza, Puff Pastry Peas Patties, Savory Hand Pies, Bread Pizza, Garlic Bread and more.
    Garlic Knots, Stuffed Dominos Bread, Pizza, focaccia are some more recipes to pair it with.
    Add Pasta, Farro, Quinoa, Barley or some other grains to make this salad more wholesome.

    Make Ahead and Storage Tips

    • To make ahead - Add the dressing to the salad shortly before serving. If you don’t plan to eat it all right away, dress only what you plan to eat right away.
    • How to Store? I suggest to serve the dressing on the side. so that it is easy to store undressed salad. Dressing can wilt the greens very quick. Now store the leftover, undressed salad in the refrigerator for up to 4 days. Refrigerate any leftover dressing in an airtight container (a jar is perfect), then shake before serving.

    Can I double the recipe?

    Yes absolutely you can double or triple the recipe.

    Can I make Vegan Spinach Salad?

    Yes! The only non vegan ingredient in the recipe is Feta Cheese. You can either skip it or use vegan cheese.

    Is this Berry Salad Glutenfree?

    This is a glutenfree Salad. And it is very healthy.

    What are the ingredients of Spinach Strawberry Salad?

    This Salad needs just handful ingredients that are easily available.
    • Spinach - Although this salad is about spinach as a main hero, but I sometimes use a mix of spinach and arugula too. It is your choice. Either use spinach or a mix of 2 greens. Do not use lettuce for this recipe.
    • Strawberry - This salad requires fresh strawberries. Make sure to use ripe (not over ripe) and firm strawberries in the salad. I do add handful of blueberries to this salad for color and flavors. Now if you do not like strawberries or are allergic to it, then pears and apples will be great in this salad.
    • Pecans - I love using pecans in fruity salads. In case you do not have pecans, you can use walnuts as well.
    • Almonds - Sliced almonds are another of my favorite nuts to add to this salad. They add amazing crunch to it. You can skip it if you want.
    • Feta Cheese - I love how creamy feta cheese is. It adds amazing flavors to the salad. But you can totally substitute it with either goat cheese or blue cheese.
    • Quinoa - Now this is optional. I normally add quinoa to my salads to make a complete meal.
    • Chia seeds - Another optional ingredient but I love it. It adds nice crunch to the salad.
    • Honey Balsamic Vinaigrette - I love making it at home. It is so easy to make it. And the best part is that you can control the ingredients to your liking. You can use the store bought salad dressing as well. Recipe is given in the notes.
