We recommend that you read the whole post. It has many tips and suggestions.
First of all place the trivet inside the Instant Pot and plug it in. Place the trivet inside the inner pot. Add 1 cup of water to it.
Wash and clean the pumpkin thoroughly. Cut off the attached stem.
Place your Sugar or Pie Pumpkin on the trivet.
Close with the lid. Set the valve on SEALING. Press PRESSURE COOK MODE and set it on High for 17 minutes.
PRO TIP - This pressure cook mode time will vary depending upon the weight of the pumpkin. Most of the time it takes about 15 minutes for a 2.5 pound pumpkin to cook thoroughly. my 2.7 pound pumpkin took about 17 minutes. And 3 pound pumpkin might take 20 minutes. A 4 pound pumpkin might take about 30 minutes. So decide upon the timing as per the weight of the pumpkin.
Once the timer goes off, follow NPR (natural pressure release). Now test if the pumpkin is cooked thoroughly by piercing a knife through the cooked pumpkin. If it goes through smoothly, it is cooked. If not, then cook for 2 more minutes and repeat.
Take out the pumpkin and cut it from one side. It will peel off like butter. The shell of the pumpkin will slide off easily.
Now take a fork and remove the seeds and fiber from the middle of the pumpkin.
You can save the seeds and clean the fiber. Dry them out and bake. Eat as a healthy snack.
On the other hand, take the flesh of the pumpkin. Cool it and blend it in a blender with some water till it runs into a smooth puree. I did not do that. Rather I used a fork and mashed it down to a thick puree/pulp.
It is ready to be stored and used as needed.
