How to make Air Fryer Roasted Vegetables?
First of all wash the vegetables properly in a Kitchen Colander and then pat them dry. Now cut them into chunky pieces. Make sure to keep the size of all the vegetables similar in size.
Take a mixing bowl and add vegetables to it. Toss them with Olive Oil, Italian Seasoning, Salt & Black Pepper.
Preheat the Air fryer at 380*F and then add the vegetables to it.
Air fry for about 10-12 minutes till the vegetables cook and caramelize. Stir the vegetables with Kitchen Tongs in between for even cooking.
You may sprinkle these with some parmesan cheese or even drizzle with some balsamic vinegar to enhance the flavors.
How to serve these Roasted Mixed Vegetables?
- I love to add these roasted vegetables to my boiled pasta and make delicious Pasta & Roasted Vegetable Salad. My kids love it.
- Drizzle with some balsamic vinegar and toss. Add to your favorite flat bread and make yummy ROASTED VEGETABLE WRAP with some added goat cheese or feta cheese.
- Serve these as is on the side of your fav meal.

You can refrigerate the leftover roasted vegetables in an air-tight container. It will stay good for a week when refrigerated.
How to re-heat the roasted vegetables?
When you want to heat the refrigerated roasted vegetables then first pre-heat the air fryer at 350*F. Then heat these at 350*F for 6-7 minutes till warm enough.
Can I use frozen vegetables to roast in air fryer?
I wouldn’t recommend using frozen vegetables for this recipe. The frozen vegetables loose the texture when air-fried.

Easy Air Fryer Roasted Vegetables Recipe

Ingredients
- 1 small Onion chopped
- 2 cloves Garlic roughly chopped
- 1 small Zucchini cut into 1/2" half moons
- 10 small Mushrooms halved
- 2 mini Yellow Bell Pepper chopped
- 2 mini Orange Bell Pepper chopped
- 1/2 Green Bell Pepper chopped
- 1 small head of Broccoli chopped into small florets
- 1 tbsp Olive Oil
- 1 tsp Italian Seasoning
- To Taste Salt & Black Pepper
Instructions

- First of all, wash the vegetables properly in a Kitchen Colander and then pat them dry.

- Preheat the Air fryer at 380*F and then add the vegetables to it in a single layer. If you have a small air fryer, then you might have to do it in 2 batches.
- Air fry for about 5-6 minutes. Then stir the vegetables with Kitchen Tongs for even cooking. Cook for 4-5 more minutes till the vegetables cook and caramelize.
- You may later sprinkle these with some parmesan cheese or even drizzle with some balsamic vinegar to enhance the flavors.
- Serve these warm.

- You will roast these vegetables in the air fryer lid as is following the air fryer instructions.
Oven Baking Instructions
- Preheat the oven at 400*F. You will prep the vegetables as instructed above for air fryer.
- Then you will bake these in a baking sheet at 400*F for about 25-30 minutes till crisp and done.
