This Instant Pot Holiday Coffee Cake is the life, you guys. It is that good. I have already made it 3 times. And the best part is that 1 recipe yields 2 Instant Pot Cakes. Amazing, right?

Easy Instant Pot Holiday Coffee Cake Recipe

I firmly believe that good recipes do not need a long list of ingredients and long hours of slogging. Great food can be a result of smart planning.

Since the Holiday season is right around the corner, you will love this short-cut recipe. I have made this cake in the oven as well as the Instant Pot. And believe me, both the results came out superb.

Among the 3 batches that I made of this delicious cake, I sliced big slices and used them as holiday gifts for neighbors, friends, postal lady and family. Thus, these make excellent Hostess Gift or Holiday Gifts.

Another bonus of this recipe is that you make 2 Holiday Coffee Cakes. I did it and couldn’t be happier.

How is this a Super Easy Holiday Cake recipe?

It is super simple. I used Ready to Bake White Cake Mix as a base for this recipe. And then added ingredients for that Holiday Flavor. 

How did I get 2 Cakes from this recipe?

Since the cake batter got enriched with loads of nuts, berries, and tutti frutti, the amount of batter almost doubled up. So I divided the batter into 2 equal portions and made 2 cakes with it –

  1. Holiday Bundt Coffee Cake
  2. Regular Holiday Cake 

Both of these came out just perfect.

Ingredients of Holiday Coffee Cake

A Holiday Cake is supposed to be loaded with the bounties of the Winter. Hence a lot of nuts & fruits go into it. If you are allergic to something from the ingredients below, skip that.

  • Ready to Bake White Cake Mix
  • Gingerbread Spice Mix
  • Chopped Walnuts
  • Sliced Almonds
  • Dried Cranberries
  • Tutti Frutti/Fruit Cake Mix
  • Vanilla Extract

  • Cooking Oil
  • Water

Important Tips to remember when making Cake in Instant Pot

  • Always tap the cake pan gently on the counter a few times before making it. This will help the batter to settle down and avoid any air bubbles in between.
  • Always cover the pan with aluminum foil before baking it in Instant Pot. This will avoid the condensation on top of the cake and keep it dry.
  • I normally add water in the inner pot and press the saute button as I work on my cake. This heats up the water and saves time in the actual cooking process. The pressure comes into action faster this way. 
  • If you think that it doesn’t look appealing to your standards, then there is a quick fix to that. Once it is done, just put it under the BROILER for 2 minutes till it gets golden to your standard. Especially Fruit & Nut Cakes like this would be excellent that way.

How does the Instant Pot Cake taste?

Contrary to the popular belief that Instant Pot Cake tastes like a steamed pudding, this cake actually tastes like REAL CAKE.

Believe me, I was one of those people who thought the same way. But once I tried the cake in IP, I make it often this way.

2 facts about Instant Pot Cakes –

  1. The Instant Pot Cake is denser in texture than the Oven Baked Cake. But it is not steamed pudding.
  2. I would not recommend the Sponge Cakes in Instant Pot unless there is a recipe that breaks that rule.

How to make this Holiday Cake on Manual/Pressure Cook Button?

If you do not have a CAKE BUTTON on your IP, do not worry. You can make it on MANUAL/PRESSURE COOK MODE easily. 

Make it at HIGH PRESSURE + NORMAL PRESSURE COOK Mode for 40 minutes. Follow NPR.

Can I make this Holiday Cake recipe in Oven?

Yes absolutely yes. Just follow the instructions and bake it in the oven till done. It will take about 40-45 minutes in the oven. Do a Doneness Check with a wooden party pick. If the center comes out clean, it is done.

How to Store This Cake?

This Cake should stay good in an airtight container at the room temperature for 2-3 days in winters. If you are making it in summer, I would refrigerate it after cooling it down to room temperature.

How to make Holiday Coffee Cake in Instant Pot?

Cake Prep

  • Gather all the ingredients. 
  • If you plan to make 1 bundt cake and 1 regular cake like I did, then take both your pans and grease them with butter. Line your regular cake pan with a parchment paper. Just cut it into a 7 inches circle and place it evenly inside the pan. You do not have to line the Bundt pan. Grease the Bundt Pan generously for an easy flip. Set aside.
  • Wash, dry and peel the apples. Core them. And cut the apples into very tiny pieces. Cover and Set aside.
  • Take your Kitchen aid and attach the cake mixing whisk to it or use a large mixing bowl and electric egg beater. Add Eggs + Cooking Oil + Water + Vanilla Extract + Ginger Bread Spice to the bowl. Blend on medium speed for 2 minutes till all the ingredients are well incorporated.
  • Now start adding the WHITE CAKE MIX slowly to the wet ingredients and mix until it is all incorporated in an even lump-free batter. It will take about 3  minutes.
  • Now add Chopped Apples, chopped walnuts, cranberries, fruit cake mix/tutti frutti to the cake batter. Mix gently.

Prepare the Instant Pot for the Cake

Place the inner pot inside the IP. Pour 1&1/2 cups of warm water to the IP. Or pour room temperature water in it and warm it up on SAUTE mode till you are ready for the cake. Switch off the saute mode once the water is warm.

Making Cake in BUNDT PAN

When making it in BUNDT PAN, first spread the sliced almonds at the bottom of the pan. Then pour half of the batter in it. Spread it evenly. Tap it on the counter a few times gently. Cover with aluminum foil.

Place the bundt pan on the Trivet and gently slide it inside the IP. Close the lid and set the valve to SEALING. Press CAKE MODE. The normal setting on it is HIGH PRESSURE + NORMAL CAKE MODE for 40 minutes. Don’t touch it. Use that setting.

Once the timer goes off, follow NPR (natural pressure release). Open the lid when the safety pin drops down. Take out the trivet. Remove foil. Let the cake rest in it for 10 minutes before flipping it out gently. Now let the cake rest on a cooling rack till it comes to room temperature.

I did put my cake under the broiler for 2 minutes for that desired golden color. This step is optional. If you want to do that too, then keep the oven ready when you take out the cake from IP. Remove the foil and place it under the broiler for 1-2 minutes till slightly golden.

Making Cake in Regular Cake Pan

Pour the rest of the batter into the prepared 6 inches pan, lined with parchment paper. Spread the almond slices evenly on top. Tap it on the counter a few times gently. Cover with aluminum foil. Keep it in the back of the refrigerator till IP is making your Bundt Cake. If you have 2 IPs, then you can make them together at the same time.

When ready to make, place the cake pan on the trivet and gently slide it inside the IP. Close the lid and set the valve to SEALING. Press CAKE MODE. The normal setting on it is HIGH PRESSURE + NORMAL CAKE MODE for 40 minutes. Don’t touch it. Use that setting.

Once the timer goes off, follow NPR (natural pressure release). Open the lid when the safety pin drops down. Take out the trivet. Remove foil. Let the cake rest in it for 10 minutes before flipping it out gently. Now let the cake rest on a cooling rack till it comes to room temperature.

This Holiday Coffee Cake made in Instant Pot is so amazing. It is really easy to make and is enriched with nuts, dry fruits, tutti frutti, and gingerbread spice. Oven instructions are also included.

Ingredients

  • 1 box White Cake Mix
  • 3 Eggs room temperature
  • 1/4 cup Oil
  • 1 cup Water
  • 1 tsp Vanilla Extract
  • 2 tsp Gingerbread Spice
  • 2 medium Apples, (Gala or Red Delicious) washed, peeled and cut into very small pieces
  • 1/4 cup Almonds sliced
  • 1/4 cup Cranberries dried
  • 1/4 cup Tutti Frutti or Fruit Cake Mix
  • 1/2 cup Walnuts chopped

Instructions

How to make it if IP doesn't have CAKE BUTTON?

  • If you do not have a CAKE BUTTON on your IP, do not worry. You can make it on MANUAL/PRESSURE COOK MODE easily. Make it at HIGH PRESSURE + NORMAL PRESSURE COOK Mode for 40 minutes. Follow NPR.

How to store this Cake?

  • This Cake should stay good in an airtight container at the room temperature for 2-3 days in winters. If you are making it in summer, I would refrigerate it after cooling it down to room temperature.

Cake Dressing

  • You do not have to dress it up. It is a complete cake. But I did dress it up with Cheesecake Frosting. I took 3 tbsp ready-made cheesecake frosting and diluted with 1 tsp milk. warmed it up for few seconds in the microwave. Mixed it well. Cooled down a bit. Then just spooned this frosting into threads over the cake. Easy, right?
