Air Fryer Peas Puff Pastry are popular as Matar Patties in India. The recipe is so easy to put together that you can make it with only little prep. It is super yummy. The flaky layers of delicate puff pastry make the green peas stuffing all the more delectable. I have included a small instructional video of the recipe for better understanding.
Easy Air Fryer Matar ki Patties ~ Savory Air Fryer Peas Puff Pastry Recipe
I have great memories of potato patties and coffee from the corner shop of the neighborhood. Potato Patties and Matar ki Kachori are 2 very popular high tea snack items of UP/Delhi region. At least from my memory of 20 years ago.
So what do you do when you are craving for both at the same time? You make Matar Patties or Spicy Green Peas Puff Pastry.
Green Peas Stuffing or Matar ki Stuffing makes these patties really delicious.
Since this savory puff pastry recipe is so easy to prepare, it is perfect for high tea, or anytime snack. If you make these small, then these are great as hors d’oeuvres.

People often make the flaky delicate pastry at home. But I have taken a short cut and have used Store bought Puff Pastry Sheet.
Although puff pastry is preferred, you can use Phyllo Sheet as well.
What is a Puff Pastry?

Puff Pastry is a flaky pastry made from laminated dough composed of dough and butter. The butter is put inside the dough (or vice versa), making a paton which is repeatedly folded and rolled out before baking.
Gaps that form between the layers left by the fat melting are pushed (leavened) by the water turning into steam during the baking process.
Did you know that the first traces of modern Puff pastry are found in Spanish Cooking? And then later in French Cuisine.
These are very popular in India with various savory fillings, known as PATTIES.
What is Green Peas Stuffing?
Although I make the stuffing with frozen green peas but you can use fresh peas instead as well.
The filling is an inspiration from a dish that my mom often made as a snack.
She made this Matar ki Chaat (warm peas salad) as an after school snack in winters. The dish is packed with protein + fiber, delicious & is healthy.
I make this recipe using Curry Spices.
You can use just salt & pepper or any other seasoning of your choice.
It is a basic simple recipe.
Recipe Ingredients
Puff Pastry Sheet
Frozen Green Peas
Olive Oil or Cooking Oil
Spices – black mustard seeds, coriander powder, turmeric powder, red chili powder, salt, garam masala, dry mango powder OR skip it all and use CURRY POWDER
Note – If you like to cook Indian Recipes, then all those spices mentioned above are a good investment.

How to make Peas Puff Pastry or Matar Puffs or Matar Patties?

- Green Peas Stuffing Prep – I made this stuffing on gas top. But you can use instant pot as well.

Green Peas Stuffing Prep

- Make sure to use small green peas if using frozen or fresh peas. If you are using harder peas, then you have to cook it in the pan longer.
- Heat oil in the Heavy bottom pan. Once it is hot, add black mustard seeds & splutter on medium high heat. Add onions & saute further with kitchen spatula.
- Further add all the spices to it including coriander powder, turmeric powder, red chili powder, salt, & garam masala, except Dry mango powder. (If you are using curry powder, then add at this point instead of all the spices). Mix well.
- Now add the frozen green peas & mix more. Add little water and stir. Cover & cook on medium heat till water is gone & the peas are soft. Further add dry mango powder & mix it in. Mash it coarsely with the back of the spoon. Stuffing is ready. Now cool it to the room temperature.
- You can prepare it ahead of time like a day in advance as well & refrigerate. Use as needed. (see the notes)
Puff Pastry Dough Prep with Stuffing
- If you are using frozen puff pastry, then make sure to thaw it accordingly and it is ready to be used.
- Roll the sheet out. Measure and cut it out in 6-8 sqaures using Kitchen scissors. I cut it out in 6 equal squares.
- Lay one square on working surface. Place 1&1/2 to 2 tbsp filling on one side of the square. Leave some space at the edges to seal. Fold the other half of the square over. Press the edges & corners down with fingers. Use a Fork and seal the edges from all the sides. (see video)
- Now use either a pizza cutter or a sharp knife to cut off the uneven edges. Don’t cut too close the filling.
- Mark 2 small slits at the top. Repeat the process for all the squares and set aside. Make sure to keep them on parchment paper so that it is easy to pick and work. These are ready to be air-fried.
Air Fry Savory Puffs / Air Fryer Matar Patties
- Place the Air fryer parchment paper in the basket of the air fryer. Or use a butter paper. It will help avoiding the puffs sticking at the bottom.
- Place 2-3 at a time depending upon the size of the air fryer. Set the temperature and timer. Air fry for few minutes. Take out. Brush with a little melted butter and air fry for few minutes for golden top.
- For crispy base – after brushing with butter, remove the parchment paper and air fry further till golden.
Serving suggestion
These are served well with Green Cilantro Chutney and Ketchup.
Can I make these Peas Puffs in the oven?
Yes absolutely. Follow the instructions for the prep. And then bake in the oven for the given time as mentioned at the back of the puff pastry. The filling is already cooked so it does not need any cooking.

Air Fryer Peas Puff Pastry Matar Patties
Equipment
- Kitchen scissor
- Pizza Cutter
- Heavy bottom pan with lid
Ingredients
- 1 sheet Puff Pastry see notes for options
- 2 cups Green Peas, small frozen (can use fresh too)
- 1/2 cup Onions finely chopped
- 1 tbsp Cooking Oil
- 1 tsp Black mustard seeds
- 2 tsp Coriander powder
- 1/2 tsp Turmeric powder
- 1/2 tsp Red chili powder or less (to taste)
- 1/2 tsp Garam Masala
- 1 tsp Salt or to taste
- 1/2 tsp Dry Mango powder or 1 tsp lemon juice
- 3 tbsp Water
If you do not wan to use any of the spices then use this
- 1 tbsp CURRY POWDER
- Salt to taste
- 1 tsp Lemon juice
Instructions
Gather & Measure all the ingredients & set aside. Watch the video for better understanding. Always red the NOTES section for more options.
- The recipe is divided into 3 parts - preparing the Peas stuffing, preparing the puffs/patties, air-frying the patties or puff pastry.
Green Peas Stuffing
- Make sure to use small green peas if using frozen or fresh peas. If you are using harder peas, then you have to cook it in the pan longer.
- Heat oil in the Heavy bottom pan. Once it is hot, add black mustard seeds & splutter on medium high heat. Add onions & saute further for about 2 minutes with kitchen spatula.
- Further add all the spices to it including coriander powder, turmeric powder, red chili powder, salt, &Â garam masala, except Dry mango powder. (If you are using curry powder, then add at this point instead of all the spices). Mix well.
- Now add the frozen green peas & mix more. Add 3 tbsp water and stir. Cover & cook on medium heat till water is gone & the peas are soft for about 4-5 minutes. Further add dry mango powder & mix it in.
- Mash it coarsely with the back of the spoon. Stuffing is ready. Now cool it to the room temperature.
- You can prepare it ahead of time like a day in advance as well & refrigerate. Use as needed. (see the notes)

Air Fry Savory Puffs / Air Fryer Matar Patties
- Place the Air fryer parchment paper in the basket of the AIR FRYER. Or use a butter paper. It will help avoiding the puffs sticking at the bottom.
- Place 2-3 at a time depending upon the size of the air fryer. Set the temperature to 390/400*F and timer to 6 minutes. Air fry. Take out. Brush with a little melted butter and air fry for 2-3 minutes more for the golden crispy top.
- For crispy base - after brushing with butter, remove the parchment paper and air fry further for 2-3 minutes till golden & crispy at top.
Serving Suggestion
- These are served well with Green Cilantro Chutney and Ketchup.
