Besides the joke, it is a truth that most of us are hooked to the weekly fix of our favorite eat-outs. Chipotle is definitely one among those.
Their ever popular BURRITO BOWLS is a base of Rice & Beans topped with all kind of things. The meal is hearty and my personal favorite.
I normally top my RICE BOWL with black beans, pico de gallo, salsa, corn, & guacamole. Finally, I add more hot sauce on the top.
Yes, that is how I eat.

PANTRY FRIENDLY INGREDIENTS FOR BURRITO BOWL

Dry & Canned Ingredients
Long Grain White Rice – You may use Basmati also. The cooking time and water ratio shall remain the same.
Medium Chunky Salsa – you may use mild salsa or hot salsa, your choice. Chunky style salsa adds nice texture and flavors to the recipe. I have not used any other kind but feel free to adapt the recipe and use whichever is handy.
Paprika – use whichever kind you have or skip it. Taco seasoning already has it. I like to add extra to add more punch.
Fresh Produce – Onions, Garlic, Bell Peppers, Cilantro, Lime Juice or use bottled lime juice.
And Water of course.

How to serve this dish made with Rice & Beans?
I am a very simple meal planner for my weekly plans. Since I tend to cook extra, so that the leftovers can be paired with other recipes over the week.
- I actually served these with Caramelized Onions & Bell Peppers Quesadillas, prepared by my kids.
- These are perfect to be served as is like a TEX MEX RICE BOWL with some toppings of choice like – salsa, pico de gallo, gucamole, jalapenos, lime juice & cilantro. It is mmmmm… good.
- Pair these up with fajitas of your choice.
- Stuff your BURRITOS with it or a TACO may be. It will not disappoint you.
- Or serve these with some comforting TACO SOUP.

How to make Chipotle Copycat Burrito Bowls at home?
Probably it is one of the most simple recipe. It seems like almost a Dump & Cook recipe.

- First of all, you saute Onions & Garlic.
- Furthermore add washed Rice, Drained & washed Canned Black Beans + Seasonings. Cook on Pressure Cook Mode.
- Next dO QPR (Quick Pressure Release). Remove the lid. Let stand for sometime. Fork it gently.
- Finally, serve in rice bowls and garnish with the desired toppings.
PRO-TIP
To achieve beautiful texture of the long grain/basmati rice – cook it perfectly for 5 minutes on HIGH PRESSURE COOK MODE. Follow QPR. Open the lid. Let stand for 5 minutes. Fork it gently with a serving fork or regular fork. Do it slowly without breaking the grain.

Complete Instant Pot Burrito Bowls Chipotle Copycat Recipe in Printable Recipe Card
This Recipe for Instant Pot Burrito Bowls is just so good and easy to make. It is very close to Chipotle copycat recipe and a definite family favorite. Complete meal on its own or get it paired with your fav Tex Mex thing. Easy for a week-night meal. 1. Firstly, place the inner pot inside the Instant Pot. Plug it in. Then set the SAUTE MODE on HIGH. Finally when the screen displays HOT, add olive oil. After a few seconds, add finely chopped onions and garlic. Saute for 2 minutes. Cancel the Saute Mode. 2. Now add washed & rinsed RICE + Washed & rinsed Canned Black Beans + Salsa + Taco Seasoning + Cumin Powder + Paprika + Salt. Add 2 cups of Water and stir. If not stirred well, you may get BURN notification. For that reason, proper stirring and scraping the bottom of the pot is important. 3. Close the lid and set the valve on SEALING. Finally, press the PRESSURE COOK MODE (also known as manual mode in some models) and set it on HIGH for 5 MINUTES. 4. As the timer goes off, follow QPR (quick pressure release) and open the lid once safety pin drops down. Let it stand like that for 5 minutes before digging in if you want good looking rice. 😀 5. Now take a fork and fork the RICE & BEANS carefully & gently. This will help separate the grains. 6. Your Chipotle style One Pot Vegan Rice Burrito Bowl is ready. Pour in the serving bowl. Garnish with pickled or fresh jalapenos, chopped cilantro, chopped avocado, chopped bell peppers, a good squeeze of lime and may be some more salsa and a bit of hot sauce. 1. Do you know how water and/or cook time would change if I were to use brown rice? Thanks!
I haven’t tried this with brown rice. For brown rice you have to cook with double the water of the amount fo rice and for about 23-25 minutes. For that you can actually use fry beans. Don’t use canned beans to cook with it. If you plan to use canned beans then add them later once the rice is done.
